Ingredients

  1. 12 Rhodes Cracked Wheat Rolls, thawed
  2. turkey meatballs, recipe below
  3. marinara sauce, store bought or homemade
  4. mozzarella cheese
  5. butter
  6. Meatballs:
  7. 2 pounds ground turkey
  8. 1 cup Italian bread crumbs
  9. 3 egg whites
  10. 3 tablespoons water
  11. 3 tablespoons dry minced onions
  12. 1/4 cup parmesan cheese
  13. 1/2 teaspoon each salt and pepper

Instructions

Make meatballs following the instructions below. 

Combine two of the thawed Cracked Wheat Rolls by kneading together lightly. Pinch together at the bottom and form into a small loaf shape. Let rise for 45 minutes to an hour, or until doubled in size. Bake at 350 degrees F until golden brown.

Slice each mini roll loaf in half. Spread butter on both the top and bottom. Place 2 or 3 meatballs on each bottom piece. Spoon marinara over the meatballs and add a slice of mozzarella to each. Place both the meatball filled bottom and the top, butter side up, on a baking sheet.

Bake at 350 degrees F for 5-8 minutes, or until cheese is melted and bread edges are golden brown. 

Meatballs:
Combine all of the ingredients thoroughly. Roll into 2 inch balls (makes about 24). Place on baking sheet and bake at 350 degrees F for 25 minutes. Turn meatballs halfway through baking time.
