Set out Rhode's frozen bread rolls on a plate to thaw, about 3 to 4 hours prior to assembling kabobs.
Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. In a bowl, melt butter and add garlic powder, parmesan cheese, and parsley. Stir to mix and set aside.
Roll out thawed bread roll into a long strip, like a child making a play dough snake. Thread the pointy end of the skewer through one end of the dough strip.
Add some pepperoni, a few veggies, and a meatball. Push the pizza toppings down along the skewer as you add more. It's best to not pack the skewer too tightly, to leave room for the bread roll to expand during baking.
Next, stretch the dough over the top and through the pointy end of the skewer. Add a few more "toppings" and pull the dough up and over, creating an s-shape of dough weaving throughout the toppings on the skewer.
Repeat again until about half the skewer is filled. More than two meatballs may make your skewer a little too heavy.
Repeat with remaining skewers and ingredients. Place kabobs onto prepared baking sheet, alternating ends to allow space for the bread rolls to expand slightly during baking. You may need to bake your kabobs in two separate batches.
A few veggie-free kabobs can also be made for the meat-lovers in your family.
Brush kabobs with melted butter mixture and bake in the oven for 10 minutes.
Remove from oven, flip kabobs over and sprinkle with mozzarella cheese. Return to oven and bake for an additional 5 minutes.
Remove from oven and allow to cool slightly before serving. Enjoy with your favorite pizza sauce.
