Fun little individual pot pies!

  1. 6 Rhodes Yeast Dinner Rolls, thawed to room temperature
  2. 1 clove garlic minced
  3. 1/2 cup sliced fresh mushrooms
  4. 1/4 cup chopped green pepper
  5. 1/4 cup chopped yellow onion
  6. 1 1/2 tablespoons olive oil, plus more for brushing
  7. 15 ounce can crushed tomatoes with basil
  8. 1 cup pepperoni slices, cut in half
  9. 1 pound ground sausage, browned and drained
  10. 2 cups cubed mozzarella cheese
  11. 1/4 to 1/2 cup shredded fresh parmesan cheese


Saute garlic, mushrooms, peppers and onions in olive oil for 5 to 7 minutes. Add crushed tomatoes and simmer for 10 minutes.

Toss pepperoni halves, sausage and mozzarella cubes in a bowl. Add tomato mixture and mix well. Divide mixture evenly between six 8 ounce ramekins.

Spray counter lightly with cooking spray. Roll each dinner roll into a 6 inch circle. Lay a dough circle over the top of each ramekin. Brush with olive oil and sprinkle with parmesan cheese. Bake at 350°F 12-15 minutes.
