On two large cookie sheets sprayed with cooking spray, thaw rolls as directed on package, usually about three hours. Spray two 9x5-inch loaf pans with cooking spray. When the dough has thawed, use your fingers to push down the center of each roll. Drop 1/2 Tablespoon of pizza sauce into the middle of each roll in indentation that you just made. Top with about 1/2 Tablespoon of shredded mozzarella. Place two slices of pepperoni inside the dent and fold it over the top of cheese so that it is covers it like a tent. Fold the rolls and pinch the dough up and around the toppings like a taco. Place 9 rolls in each loaf pan alternating right, left, right, left, and so on. Spread 3 Tablespoons of pizza sauce over the rolls in each pan. Sprinkle each pan with about 1/4 cup shredded cheese. Cover the pans with a clean dish cloth and let raise for 20 minutes or until doubled.
Preheat oven to 375 degrees and bake for 20-25 minutes. The tops will be golden and when the tops are pressed gently, they will spring back. Run a knife around the edges of the pan to loosen pull apart pizza and turn out onto a serving platter. Serve warm as is or with ranch, Mariana, or extra pizza sauce for dipping.
This recipe easily accommodates your crowd and can be halved or doubled depending on the size of crew your are feeding. I jar of pizza sauce makes about 4 loaves of this pull apart pizza. Sometimes, if I add a little extra pepperoni by placing a slice in between the rolls as I layer them in the pans.
