What could be better than yummy fresh peaches and soft brie cheese made into a pie that you can pick up?

Prep Time: 30 min (not including thaw time)
Bake Time: 20 min

  1. 12 Rhodes Yeast Dinner Rolls, thawed to room temperature
  2. 3-4 fresh peaches, pitted, peeled and sliced
  3. 6 teaspoons soft brie cheese
  4. 2 tablespoons brown sugar
  5. 1 teaspoon cinnamon
  6. 1 tablespoon honey
  7. 3 tablespoons butter
  8. additional brown sugar and cinnamon to sprinkle over top


Spray counter lightly with cooking spray. Flatten each roll into a 4-5 inch circle. Place 4-5 peach slices in the center of 6 of the dough circles. Place a teaspoon of brie in the middle of the peaches. Combine sugar and cinnamon and sprinkle equally on top of the peaches. Top each with about 1/2 teaspoon of honey.

Top each one with another dough circle and press edges together well. Press edges with a fork to seal. Place the 6 hand pies on a sprayed baking sheet and slice a small slit in the top of each one to vent.

Brown butter by melting in a sauce pan over medium heat letting it bubble and cook until it turns darker and there are brown flecks in the butter. Brush butter over hand pies, reserving enough to repeat the process after the pies come out of the oven. Sprinkle with additional brown sugar and cinnamon. Cover with sprayed plastic wrap and let rise for 30 minutes. Remove wrap and bake at 350°F 15-20 minutes. After removing pies from oven, brush again with browned butter.
