  1. Pull out 9-12 rhodes rolls from the freezer and allow to thaw and rise. For bigger sandwiches, try the texas rolls or the loaf bread.
    As soon as the rolls are ready to bake, preheat the oven to 365 F. Toss a few handfuls of spinach in a bowl with a tablespoon of oil. Add sesame salt, parmesan and a touch of garlic powder.


Arrange coated spinach evenly on a sprayed or lined cookie sheet. Put both spinach and rolls in the oven for 10 minutes. Remove the spinach after 10 minutes and set aside to cool. Cook the rolls until golden brown on top. Slice up mozzarella, cucumbers (avocado would be delicious, too), and roast beef. I purchased roast beef from the deli counter. Beef pastrami would work well here, too. Once the spinach and rolls are cooled, scrape the spinach off the cookie sheet and place atop the beef. Assemble your sandwich. A little mayo on the roll is very delicious. Serve! Garnish with a toothpick and green flag for more Irish festiveness.
