Treat Dad to "Breakfast in Bed" with these fun, easy and delicious Ham & Egg Cups.

Prep Time: 15 min (not including thaw time)
Bake Time: 15-20 min

  1. 6 Rhodes Texas Rolls or 9 Rhodes Yeast Dinner Rolls, thawed to room temperature
  2. 1/4 cup Italian style bread crumbs
  3. 3 ounces cream cheese, cut into 12 equal pieces
  4. 6 eggs
  5. salt, to taste
  6. 1 1/2 cups fully cooked ham, cut into cubes
  7. 1 cup grated provolone cheese
  8. 2 tablespoons chopped green onion
  9. pepper, to taste


Spray board or counter with non-stick cooking spray. Roll one Texas roll or 1 1/2 dinner rolls, combined, into an 8-inch circle. Repeat with remaining rolls. Cover with sprayed plastic wrap and let rest 10 minutes.

Remove wrap and place dough circles in 6 sprayed jumbo muffin cups. Sprinkle 2 teaspoons bread crumbs into the bottom of each dough lined cup. Top each with two cubes of cream cheese.

Carefully break an egg into each cup and sprinkle with salt. Top with ham, cheese and green onions. Sprinkle lightly with pepper.

Bake at 400°F 15-20 minutes or until golden brown. Cover with foil last 5 minutes if necessary to prevent over browning. Serve warm.
