Spray counter lightly with cooking spray. Combine 4 rolls and roll into a 15 x 4 inch rectangle. Repeat with remaining 4 rolls. Spread the middle of each rectangle with 2 teaspoons mustard.
Top each one with 1/2 cup ham , half of the cheese strips, half of the green onions, and half of the parsley. Fold the bottom third of each rectangle over the filling and fold the top third down over the bottom third. Pinch together to seal.
Cut each into 12 equal pieces and place each piece on a sprayed baking sheet, seam side down. Bake at 350°F 15 minutes or until golden brown.
