Preheat waffle iron and spray with cooking spray.
Slice baked loaf of bread into 8 slices.
Combine eggnog, eggs and nutmeg in a dish that is large enough to fit a slice of bread.
Whisk mixture together until well combined. Dip both sides of each slice of bread into eggnog mixture, covering completely.
Place in the preheated waffle iron, close lid, and cook until crisp.
Serve with maple syrup.
