Spray baking sheet with cooking spray. Place 6 rolls on the sheet. Cover them loosely with a clean dish towel. Let thaw for an hour, or until soft and just barely starting to raise. Place your over rack in the top third of your oven and preheat it to 350 degrees. Bake crusts for 10-15 minutes. Watch them closely because the sugar on the bottoms will burn easily. Let cool.
While cooling, prepare frosting. Beat cream cheese for 60 seconds or until smooth and fluffy. Add butter and beat until combined. Gradually stir in powdered sugar and vanilla. Spread over crusts. Sprinkle with prepared fruit. Enjoy!
