Preheat oven to 350 degrees
Using 6 room temperature rolls press each roll out with your hands.
Combine cream cheese, sugar, and vanilla in a mixing bowl and mix until smooth
Take a flattened roll and place a dollop of the cream cheese mixture on one side of dough. Be sure not to cover the edges of the dough with the mixture.
Add a smaller dollop of your favorite jam on the cream cheese mixture and spread it out. Again, be sure not to cover the edges of the dough.
Fold the empty side of the roll over the side with the cream cheese mixture and jam and pinch the edges closed.
Melt the butter and brush it over the top and bottom of the pocket then roll the pocket in the cinnamon and sugar mixture.
Place the pockets on a baking sheet. Take a fork and press the the tines along the pinched edge of each pocket to give the edges a decorative look and to further seal each pocket.
Bake at 350 degrees for 12-14 minutes or until golden brown.
