Cranberries are a good for you treat baked into this beautiful breakfast eye candy.


Prep Time: 15 min (not including thaw time)
Bake Time: 30-35 min

Ingredients

  1. 12 Rhodes Orange Rolls or 24 Rhodes Yeast Dinner Rolls
    *thawed but still cold
    small package non-instant vanilla pudding
    1/4 cup dried cranberries
    1 orange rind, grated
    1/2 cup butter or margarine, melted
    cream cheese frosting, included with orange rolls

Instructions

Cut rolls in half and roll in dry pudding mix. Arrange, alternately with cranberries and orange rind, in large sprayed bundt pan. Sprinkle remaining pudding over rolls.

Pour melted butter over top. Cover with plastic wrap and let rise until double in size.

Remove wrap and bake at 350°F 30-35 minutes. Cover with foil last 15 minutes of baking. Remove from oven and immediately invert onto a serving platter.

Cool slightly and drizzle with cream cheese frosting.

*If using dinner rolls, add 1/4 cup sugar to pudding and follow recipe above.

For frosting, mix 1 cup powdered sugar, l tablespoon melted butter and 2 tablespoons fresh orange juice.

Very tasty- disappeared in no time. I "kicked it up a notch" by adding a little Grand Marnier orange liqueur to the icing... yum!

Love this. I cut the rolls in half, also added some dried orange peel to the dry pudding for extra flavor.
