Roll the thawed loaf of bread into a large rectangle about 1/4 inch thick. Toss the chopped strawberries with the corn starch and sugar. Spread the strawberry mixture evenly onto the dough.
Start at one of the long edges and roll toward the center, being careful to tuck the strawberries in as you go. When it is completely rolled into a log, pinch to seal the end.
Cut the log into 1 1/2 inch pieces (I got 10 rolls out of my log). Put each piece onto a cookie sheet lined with parchment paper or a baking mat. Leave a few inches between each roll, so that they have room to rise. Cover the rolls with a clean kitchen towel and let rise in a warm place for 1 hour, or until they are nice and puffy.
Bake at 350 degrees Fahrenheit for 20-25 minutes, or until the rolls are lightly brown on top. Remove from the oven and allow the rolls to cool for a minute while you melt the chocolate.
Put the chocolate chips in a microwave safe bowl and microwave on high for 30 seconds at a time. Stir between each 30 seconds , and only cook until they are just melted. Drizzle each sweet roll with the melted chocolate and ENJOY!
