Set your Rhodes rolls out to thaw several hours before you plan to eat. Gather and prep ingredients: shredded chicken, diced onion, diced yellow bell pepper, diced ham, shredded cheese, cream cheese and an Italian dressing packet.
Add everything to a big bowl and stir until well combined. Don’t forget to add a pinch of salt and pepper (to taste).
Roll out two rolls in the shape of a rectangle - they will need to be the same size. Add a big scoop of the cheesy mixture to the middle of one rectangle. Then top with the other rectangle and seal them shut using your fingers or a fork. Repeat for however many hot pockets you want to make!
Bake at 350 for 12-14 minutes or until golden brown on top. Let cool before serving.
