12 Rhodes dinner rolls, thawed but still cold
2 Medium apples, chopped (I used Golden Delicious)
1/4 cup brown sugar
2 teaspoon cinnamon, separated
1/4 teaspoon vanilla
12 Caramel candies, unwrapped
2 tablespoons granulated sugar

Place 12 dinner rolls on a large baking sheet that has been sprayed with non-stick spray and thaw at room temperature until soft, but still cold (about 1 hour).

Preheat oven to 350 degree. Spray a 9 inch pie plate or similar with non-stick spray. Peel, core and dice apples. Place the chopped apples in a medium size bowl.

Add brown sugar, 1 teaspoon cinnamon and vanilla, toss to coat and set aside. Remove the wrapping on each caramel candy and set aside.

In a small bowl add the granulated sugar and the remaining 1 teaspoon of cinnamon and set aside.

Roll one dough ball into a 3 x 3 inch circle, add one tablespoon of apple filling and one unwrapped caramel in the middle of the dough circle.

Pull the edges of the dough together, crimp and seal the dough, shaping into a ball.

Roll the dough ball into the cinnamon sugar and place in the prepared pie plate or baking sheet.

Continue filling the remaining dough balls, rolling them into cinnamon sugar and placing in the pie plate.

Bake for 25 - 30 minutes or until the apple bombs are golden brown and cooked through.

Remove from oven and cool before serving. Be careful as the caramel center will be hot.

Cook's Note: Addition caramels can be melted in a small bowl with a bit of milk to drizzle over baked rolls and serve with vanilla ice cream.
