Blueberry French Toast Bites

6 Rhodes Dinner Rolls, thawed but still cold
1 cup granulated sugar
1 tsp ground cinnamon
2 eggs
2 tablespoon milk
1 tsp vanilla extract
1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1/2 cup blueberries


In a small bowl, mix sugar and cinnamon. Roll each dinner roll in mixture and place inside a greased loaf pan. Cover pan with plastic wrap to rise until double in size. Preheat oven to 350 degrees and cook bread 20-22 minutes. Let bread cool.
Chop bread into bite-size pieces. Prepare egg mixture by mixing eggs, vanilla and milk in a medium bowl. Add bread to bowl and let soak. Meanwhile, in a saucepan, bring sugar, cornstarch and water to a boil over medium heat. Add blueberries and continue cooking over medium heat for about 10 minutes. Heat pan or griddle over medium-high heat and add bread. Cook thoroughly, about 10 minutes. Remove from heat. Transfer bread to plate and top with blueberry sauce. Enjoy!
