Whole Grain Chicken Broccoli Cheddar Pockets have been a favorite quick and easy dinner recipe of mine for years. Hi, it's Tiffany from Feel Great in 8, back to share another simple healthy recipe! These Whole Grain Chicken Broccoli Cheddar Pockets have been a favorite quick and easy dinner recipe of mine for years. Actually, I grew up with my mom using Rhodes rolls to make these for me! They take literally a few minutes to put together, are simple to make in big quantities, and freeze beautifully. In 30 minutes or so you can have a healthy dinner for your family and lunches to last the rest of the month! The first thing you need to do is prep your ingredients. First, let the Rhodes Cracked Wheat Rolls thaw - I just cover mine in plastic wrap sprayed with a little olive oil and leave them to thaw on the counter, or you can microwave them on a low setting until thawed but not cooked at all. Then you'll just need to chop your broccoli and chicken and shred some cheddar cheese. I usually use a rotisserie chicken from the grocery store, which makes this recipe even easier, but you can use any cooked chicken.

Next, flatten each thawed roll into a 5 inch circle. You can see that the circle isn't too thin, but you want it stretched and flattened enough to fit all those yummy ingredients.

Pull the dough around the ingredients until the sides meet and a pocket is formed. Pinch together the edges of the dough to seal in the ingredients. If your dough has been out long enough to feel dry, wet your finger and moisten the edges of the dough so that it sticks well. Whole Grain Chicken Broccoli Cheddar Pockets have been a favorite quick and easy dinner recipe of mine for years. Place each pocket on a cookie sheet sprayed with olive oil or nonstick spray. Bake at 350 degrees F for 15-20 minutes, or until the tops and bottoms are golden brown. Enjoy!

Ingredients

1 package (24 rolls) Rhodes Cracked Wheat Rolls
1 pound chicken cooked and cubed
1 small head of broccoli, washed and chopped
2 cups of shredded cheddar cheese

Instructions

Chop your broccoli and chicken and shred some cheddar cheese.
