Very Berry Oatmeal Pizza, you have everything in your pantry!

Breakfast is the most important meal of the day, it almost sets the tone for how our day is going to go. I would like my days to be full of goodness, and with the Very Berry Oatmeal Pizza using Rhodes Dinner Rolls it can be just that. I am very into baking but I have never tried my hand at a breakfast/dessert pizza. Until now, I never knew what I was missing. Today, we made this breakfast pizza and it was pure heaven in my mouth when I took the first bite. The best part about this pizza, aside from how yummy it is, is how easy it is too make!

Oatmeal Breakfast Pizza Ingredients

For this recipe you'll need the following ingredients

For the crust:

  • 9 Rhodes™ Dinner Rolls or 6 Rhodes Texas™ Rolls, thawed to room temperature
  • 2 tablespoons sugar
  • 1 tablespoon corn starch
  • 1 1/2 cups fresh or frozen raspberries
  • 1 cup fresh or frozen blueberries

For the Streusel Topping:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 6 tablespoons butter, softened
  • 1/2 cup quick oats, not instant

For the Glaze:

  • 1 cup powdered sugar
  • 1/2 teaspoon almond flavoring
  • 1-2 tablespoons milk

You'll start off by letting your rolls thaw to room temperature, then you will form them into a ball and roll it out to a 12 inch circle

 

Very Berry Oatmeal Pizza is so easy with Rhodes Rolls!

Once you have the dough rolled out, be sure to cover it with plastic while you work on the fruit mixture and streusel topping. For the fruit mixture you will combine your sugar and starch, mix well and then add in your berries and gently toss, to coat, set aside. Next you will make your streusel topping by mixing the flour, brown sugar and cinnamon. Then you will cut in your butter until the mixture is crumbly and add in the oats.

Finally you will put your dough onto a pizza pan and spread berries evenly along the top. Top with Streusel topping, and bake at 425 for 12-15 minutes, until dough and topping are golden. Remove from oven and allow to cool.

While pizza is cooling mix your milk, almond flavoring (though I substituted vanilla) and powdered sugar to make glaze. Once pizza is cool drizzle the glaze and enjoy the heck out of it, because I can assure you I did!

Ingredients

9 Rhodes Yeast Dinner Rolls or 6 Rhodes Texas Rolls, thawed to room temperature
2 tablespoons sugar
1 tablespoon corn starch
1 1/2 cups fresh or frozen raspberries
1 cup fresh or frozen blueberries

Streusel Topping:
1/2 cup flour
1/4 cup brown sugar
1/2 teaspoon cinnamon
6 tablespoons butter, softened
1/2 cup quick oats, not instant

Glaze:
1 cup powdered sugar
1/2 teaspoon almond flavoring
1-2 tablespoons milk

Instructions

Spray counter lightly with non-stick cooking spray. Combine dinner or Texas rolls and roll into a 12-inch circle. Cover with plastic wrap and let rest while preparing the topping.

Combine sugar and corn starch in a bowl, add berries and gently toss until evenly coated. Mix flour, brown sugar and cinnamon in a bowl. Cut in butter until crumbly and add oats.

Remove plastic wrap from dough and place dough on a sprayed 12-inch pizza pan. Arrange berries evenly over dough. Sprinkle streusel over berries.

Bake at 425°F 12-15 minutes or until topping and crust are browned. Let cool while making glaze.

For glaze, combine sugar, almond flavoring and milk and stir until smooth. Drizzle over warm pizza.
