Unstuffed Jalapeño Popper Dip - the perfect appetizer for ripping and dipping!

This Unstuffed Jalapeño Popper Dip is filled with cream cheese, pepper jack cheese, green onions, garlic, bacon, and a splash of sriracha sauce, all the flavors we've come expect and love in jalapeño poppers, and bakes them inside of soft pull a part bubble bread that is perfect for dipping. Yummmmy! Are you with me? It's kind of like a bread bowl, but even more delightful because it's soft freshly baked bread. And it pulls apart. How can you go wrong? If you know me from JCD, than you know I openly admit I am a weenie - I don't take heat well at all. You can adjust the heat of this dip by including the jalapeño seeds, and increasing the amount sriracha sauce that you use, and even the type of cheese. I used a new shredded cheese that has jalapeños and habanero peppers and expected the dip to be hotter than I could handle, but I handled it well, really really well. It was delicious. Maybe I'm growing up a bit?! It was mildly spicy and didn't overpower the other flavors at all, but if you want more heat, feel free to take things up a notch. Are you ready to get started?


First you'll take eight or nine in this case because my three year old insisted, frozen rolls and set them out to thaw in a baking dish that's been sprayed with cooking spray. I cover mine with a clean dish towel. I used the same pie plate I planned on baking the dip in so I didn't have as much dishes to do. I'm lazy like that.

You will set them out for about an hour, just long enough to let them get soft. Cut each roll into fourths and arrange them in a circle around the outside of a 9-inch pie pan like so.

Cover the dough loosely with plastic wrap that's been sprayed with nonstick spray and set in a warm place to let them start raising. Meanwhile prep your dip ingredients. You'll want to slice an entire bunch of green onions, dice a couple jalapeños, and mince some garlic. You'll add these to some softened cream cheese, sour cream, pepper jack cheese, bacon, and top it all of with a splash of sriracha sauce. Sooooo good. I did lick the spoon, and was tempted to stop here. But couldn't resist those bubble bread dippers.

Now carefully spoon your dip into the center of the dough wreath. I gently lifted the bread bits and spread the dip under them. This worked perfectly leaving the bread dippers to bake on top of the dough so we were able to pull the bread apart and dip as we went. You'll cover this loosely with foil, to keep the bread from getting to dark, and bake at 350 for 20 minutes. Then you will remove the foil and bake for another 10 minutes.

Ingredients

8 or 9  frozen Rhodes dinner rolls
8 oz. 1/3 less fat cream cheese, softened (I always use 1/3 less fat in dips because it bakes up less greasy)
sour cream
1/2 cup sour cream
2 large jalapenos, seeds removed and diced
1 (6-8) bunch green onions, sliced thin
3 cloves garlic, minced
1/3 cup REAL bacon bits (or 2-3 slices of bacon, crumbled), plus 2 Tablespoons for garnish I use these
2 pepper jack cheese, reserve 1/2 cup for garnish
1/4 teaspoon sriracha sauce

Instructions

Place 8 or 9 frozen rolls in a 9-inch pie pan that has been sprayed with cooking spray. Let them thaw for about an hour or just until soft. Cut each roll into fourths. Arrange the dough bits into a ring around the pan. Replace cover and let sit to finish thawing. Meanwhile prepare dip.

In a mixing bowl, beat cream cheese for 30 seconds or until smooth, add sour cream and beat until it is mixed together. Mix in jalapenos, green onions, garlic, and sriracha sauce. Add bacon and cheese stirring gently until mixed well. Carefully spoon dip into the center of the bread ring. Gently lift the dough bits and spread the dip under them. Let sit until dough raises a bit. Cover loosely with foil, really just set foil over the top and bake on 350 for 20 minutes. Remove foil and bake for another 10 minutes.

Sprinkle with reserved cheese and bacon pieces and diced jalapenos and green onions if desired. Serve warm.
