Two Cheese Focaccia

Cheesy delicious bread has never been easier. This tasty focaccia is not only simple, it's perfect for a sandwich or even great alone as a yummy snack!

One of my favorite sandwiches at a local sandwich shop is a turkey avocado on focaccia. Absolutely love it. In fact.. my mouth is watering for it as we speak. I had no idea that focaccia was SO easy to make. When I saw the recipe the first thing that came to my mind was: "I already have EVERY single ingredient this calls for!" Recipes like that are the best. If I don't have to make a special trip to the store I'm all about it. Helps of course that my freezer is stocked with just about every Rhodes Bake N Serv product that's made (I practically am my own store) so I can just run down to our deep freeze and pull out whatever I need! Love me some Rhodes.

There's one step in this recipe that I found interesting. Microwave the garlic, olive oil and red pepper flakes? One sniff out of the microwave and I knew exactly why that step was put in the recipe. I almost wanted to dive head first into it. That's how good it smells. No joke. Do not skip that step, whatever you to. You will, and I mean will, thank me later for that special treat. If you don't have or want to roll out the rolls, another trick of mine is to use the frozen loaf instead. Thaw it just like you would the rolls until is room temperature and then roll it into the rectangle from there. Voila! Easy peasy! So what would be the first thing you'd do with this if you made it? I'm not gonna lie.. this didn't get anywhere near sandwich making stage before it was all consumed in my belly. It was so good I just couldn't stop. Which gives me the perfect excuse to make it again!

Here's what you're gonna need: 

  1. 9 Rhodes Dinner Rolls, thawed to room temperature
  2. 1 tablespoon olive oil
  3. 1/2 teaspoon minced garlic
  4. 1/8 teaspoon red pepper flakes
  5. 1/2 cup shredded fresh Parmesan cheese
  6. 1 1/2 cups grated fresh mozzarella cheese
  7. ground black pepper
  8. chopped fresh parsley

Combine olive oil, garlic and red pepper flakes and microwave for 20 seconds. Set aside.

Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 9x12 inch oval shape. Place dough on sprayed baking sheet.

 Brush olive oil mixture on dough. Cover with plastic wrap and let sit until warm and risen.

Remove wrap and press dimples all over dough with finger tips. Sprinkle with cheeses.

 Sprinkle pepper over cheeses and bake at 450°F 6-8 minutes.
