If you love meatball sandwiches, or even if you don't, I know you're going to love this recipe! It's a classic you can feel good about feeding your family because now it's made healthier with lean ground turkey and cracked wheat rolls.
And, they are easier than you think to make! These are sure to be a family favorite!
Let's start with the bread for these awesome sandwiches. My favorite frozen dough are these Rhodes Cracked Wheat Rolls. I love that they have no preservatives, no trans fats, and no high fructose corn syrup. And, the rustic texture is perfect for these Turkey Meatball Sandwiches.
First just thaw the dough according to package instructions. I used two rolls to make each of the mini baguettes for the sandwiches.
Just combine the two rolls, pinch together at the bottom, and form into mini loaves. I added a few cuts in the top of each, just to make them look more like homemade artisan bread.
I also brushed mine lightly with an egg wash before baking to give them a beautiful golden brown color.
For the meatballs just mix together lean ground turkey, Italian bread crumbs (I even make my own! You can find out how right HERE), egg whites, dry minced onions, parmesan cheese, salt and pepper. Then just roll into balls and bake.
Then just slice open the rolls, add 2-3 meatballs, spoon your favorite marinara sauce over the top, add a thin slice of mozzarella and bake until the cheese is melted.
Sprinkle with fresh parsley if desired and enjoy warm. It doesn't get much better than melty mozzarella and toasted rolls. YUM!

Turkey Meatball Sandwiches
12 Rhodes Cracked Wheat Rolls, thawed
turkey meatballs, recipe below
marinara sauce, store bought or homemade
2 pounds ground turkey
1 cup Italian bread crumbs
3 egg whites
3 tablespoons water
3 tablespoons dry minced onions
1/4 cup parmesan cheese
1/2 teaspoon each salt and pepper
Make meatballs following the instructions below.
Combine two of the thawed Cracked Wheat Rolls by kneading together lightly. Pinch together at the bottom and form into a small loaf shape. Let rise for 45 minutes to an hour, or until doubled in size. Bake at 350 degrees F until golden brown.
Slice each mini roll loaf in half. Spread butter on both the top and bottom. Place 2 or 3 meatballs on each bottom piece. Spoon marinara over the meatballs and add a slice of mozzarella to each. Place both the meatball filled bottom and the top, butter side up, on a baking sheet.
Bake at 350 degrees F for 5-8 minutes, or until cheese is melted and bread edges are golden brown.
Combine all of the ingredients thoroughly. Roll into 2 inch balls (makes about 24). Place on baking sheet and bake at 350 degrees F for 25 minutes. Turn meatballs halfway through baking time.
