Nacho cheese, Shredded cheddar cheese, Doritos nacho cheese.Halloween is just around the corner and I've got THE perfect recipe for your family party, work party, church party, or heck - even pity party! Just look at how festive this Stuffed Candy Corn Pizza from Rhodes is. It's sure to bring a smile to anyone's face right away. Plus, it's made with so much cheesy goodness you won't know what to do with yourself! Nacho cheese = check. Shredded cheddar cheese = check. Doritos nacho cheese = check. Can it be any better? I think not! Lets get started shall we?Stuffed Candy Corn Pizza Check out the ingredient list, just imagine all of these wonderful flavors together! Here's what you will need: Rhodes Dinner Rolls, cooked, cubed chicken, salsa, frozen corn, BBQ sauce, cumin, salsa con queso dip, shredded cheddar cheese, nacho-flavored corn chips & sour cream.Stuffed Candy Corn PizzaSpray counter lightly with non-stick cooking spray. I have and use a ROUL'PAT that I LOVE!! Make sure your rolls are thawed to room temperature. Combine 4 rolls and flatten into a 13-inch circle. Place onto a sprayed 12-inch pizza pan or pizza stone. Roll another 4 rolls into a 13-inch circle and cover with plastic wrap; set aside. Stuffed Candy Corn Pizza In a medium bowl, combine cooked chicken, salsa, corn (thawed), BBQ sauce and cumin. Mix well. Stuffed Candy Corn PizzaBecause this recipe makes two pizza's, you will want to reserve half for the second pizza. Spread the other half of the mixture over the crust on the pizza pan.Stuffed Candy Corn PizzaRemove wrap from second dough circle and place it over the top of the chicken mixture. You'll want to roll this circle out larger than the previous circle. As soon as you go to transfer it from your counter it will shrink up. By rolling it out bigger than the bottom, it will make it easier to seal edges of dough together. Stuffed Candy Corn Pizza - Made with all kids of ymmy cheese.Bake at 375°F 20-25 minutes. Remove from oven and spread half of the con queso dip over the warm pizza. Carefully sprinkle half of the cheddar cheese along the outer edge of the pizza. Put the pizza back in the oven for 1-2 minutes to melt the cheese.Stuffed Candy Corn PizzaRemove from oven and place pizza on cutting board. Cover everything but the melted cheese edge with half of the crushed nacho chips. You can crush your chips in a Ziploc baggie with a rolling pin - or I chose to crush them in my food processor. It was done in a jiffy and all of the pieces were uniform. Stuffed Candy Corn Pizza - As yummy as it it cute!Slice into wedges and decorate the point with sour cream. Repeat the whole process to make a second pizza. Serve warm & enjoy! Trust me, you'll be the star of the party with this holiday show starter!

Ingredients

16 Rhodes Dinner Rolls, thawed to room temperature (makes 2 pizzas)
4-5 cups cooked, cubed chicken
16 ounce jar salsa
1 cup frozen corn, thawed
1/4 cup BBQ sauce
1/2 teaspoon cumin
15 1/2 ounce jar salsa con queso dip
2 cups shredded cheddar cheese
2 cups crushed nacho-flavored corn chips
1 cup sour cream

Instructions

Spray counter lightly with non-stick cooking spray. Combine 4 rolls and flatten into a 13-inch circle.

Place onto a sprayed 12-inch pizza pan. Roll another 4 rolls into a 13-inch circle and cover with plastic wrap.

Combine chicken, salsa, corn, BBQ sauce and cumin and mix well. Spread half of the mixture over the crust on the pizza pan. Remove wrap from second dough circle and place it over the top of the chicken mixture. Seal edges of dough together.

Bake at 375°F 20-25 minutes. Remove from oven and spread half of the con queso dip over the warm pizza. Carefully sprinkle half of the cheddar cheese along the outer edge of the pizza. Put the pizza back in the oven for 1-2 minutes to melt the cheese.

Remove from oven and place pizza on cutting board. Cover everything but the melted cheese edge with half of the crushed nacho chips.

Slice into wedges and decorate the point with sour cream. Repeat to make a second pizza.
