••• Strawberry Lemon Danishes••• I thought I would whip up something that's both tasty, summery and easy on little sous-chefs in honor of Mother's day. Flipping through my Rhodes cook book I came across the danish recipe (looks amazing), but I thought I would add a couple of tweaks. More lemon and fresh strawberry glaze. I will never get old of lemon and strawberry. Ever. Let's get started.
Strawberry Lemon Danishes
I take 9 rhodes rolls out of the freezer the night before and put them on a sprayed pan covered with sprayed plastic wrap in the fridge. I allow the dough to thaw in the fridge overnight. Take rolls out about 30 minutes before you plan on baking to allow to rise
- 4 oz. cream cheese, at room temperature
- 1/2 cup sugar
- 1 tablespoon fresh lemon juice (half a lemon)
- 1 teaspoon lemon zest
Preheat the oven to 350• F. Punch down each roll into a 3-4 inch disk. Add a dollop of cream cheese to the center of each roll. Bake for 15-20 minutes or until the edges start to brown.
While baking your danishes, mash up 2-3 strawberries and 1 teaspoon lemon juice. Allow 15-20 minutes to mascerate. Add 2 T strawberry mixture to 1 1/2 cup confectioners sugar and 2 tablespoons of melted butter.
Glaze your danishes and serve. They're delicious both warm and cool.

Strawberry Lemon Sweet Roll Surprise
12 Rhodes Dinner Rolls, thawed to room temperature
4 oz. cream cheese
1 egg white
1/4 cup sugar
1/2 teaspoon lemon extract - or juice
1/4 c strawberry jam
1/4 c chopped walnuts (optional)
1 cup powdered sugar
2 tablespoons lemon juice
Cream jam, sugar, egg, cream cheese & lemon extract until smooth. Fold in nuts. Flatten your dough to a 4-6 inch circle. Thinly spread cream cheese mixture & roll back up. Place rolls, crease side down, on a baking pan & cover with sprayed plastic wrap. Let rise about 30 minutes (I put mine in the sun so they'd rise faster). Bake at 375º F for 15-20 minutes or until golden brown. Combine powdered sugar & lemon juice & whisk until smooth. Drizzle over cooled rolls. Enjoy your little sweet roll surprise!
