Strawberry Donuts

Valentines day is quickly approaching, which means we all have one thing on our mind. Sweets. Or er… um.. love? But don’t they say a way to someone’s heart is through their stomach? Let me help you get there this Valentines day with some simple strawberry donuts. The pink and red colors really help set the romantic tone while the deep fried dough appeals to the man side of romance!
Here is what you’ll need to get started:
6-12 Rhodes rolls, thawed but still cold
oil for frying
1/4 cup strawberries, finely diced
1-/2 cups powdered sugar
1-2 teaspoons milk
Start by using your finger to poke a hole through one of your rolls. Carefully stretch into a larger circle. Place onto a lightly greased cookie sheet and finish the rest of your rolls. Cover with plastic wrap and allow to double in size.
Here is where things get fun. Heat 2 inches of oil in a pan. Fry each of your donuts for 20 seconds per side, or until golden brown. Cool on a wire rack and move on to the next step.
Combine the strawberries, powdered sugar, and 1 teaspoon of milk in a shallow bowl. Slowly whisk together until you get a paste like texture. You may need to add an additional teaspoon of milk if your strawberries aren’t super juicy.
Dip your donuts into your glaze. Allow them to set up for a few minutes then enjoy!
We made these for an after dinner treat last Sunday for the extended family. They couldn’t believe how simple it was, and why didn’t they think to use Rhodes before?! If you aren’t a big strawberry fan you could always dip them in a chocolate glaze or sprinkle with cinnamon and sugar.
My little guy will be taking a few dozen of these to school with him on the big day. They are just too cute, and he can’t believe that his mom made these at home. Package them up with clear bags and some red ribbon and you’ve got the perfect Valentines treat!
