Skillet Apple Dumpling Bites

Enjoy the flavors of fall with these warm and delicious skillet Apple Dumpling Bites.

Y'all know when fall hits, everyone goes crazy with all things apple and pumpkin. Well, I'm jumping on the band wagon too and sharing another wonderful apple recipe with you. These easy Skillet Apple Dumpling Bites are a delicious twist on traditional apple dumplings, made using Rhodes dinner rolls for the dumpling bites. I guess you could say this dish is a deconstructed version of everyone's favorite stuffed apple dumpling dessert.
Apple dumpling BitesSoft and fluffy bite size dumplings made from frozen dinner rolls, rolled in cinnamon sugar and baked in a homemade ooey-gooey apple filling. Goodness it doesn't get much better than that. If you have a few apples hanging around your house that need to be used, then this recipe is a must make for fall because I know you'l love it!

Apple dumpling BitesIngredients you'll need: Rhodes dinner rolls, 2 large baking apples, lemon juice, vanilla extract, heavy cream, butter, brown sugar, flour, cinnamon and granulated sugar. 

Apple dumpling BitesStart by thawing 10 Rhodes dinner rolls. You want them to be thawed but still cold. 
Apple dumpling BitesPeel and dice apples and place into a large oven safe skillet (I used my 10 inch cast iron skillet). Add the lemon juice, vanilla extract, heavy cream and butter. 

Apple dumpling BitesIn a separate bowl, add the brown sugar, flour and 1 teaspoon cinnamon. Lightly mix to combine and sprinkle over the apple mixture. Lightly stir until all the ingredients are blended together.

Apple dumpling BitesBring the apple mixture to a boil, reduce heat to med-low and simmer for 5 minutes until slightly thickened. Remove from heat and set aside (the apple mixture will thicken more as it bakes in the oven).

Apple dumpling BitesPreheat oven to 350 degrees. In a small bowl combine the sugar and remaining 1/2 teaspoon cinnamon and set aside. Using kitchen shears, cut each thawed roll into fours and roll each of the dough pieces into a ball. Roll each dough ball into the cinnamon sugar mixture and set aside. .

Apple dumpling BitesAdd half of the dough balls into the apple mixture and lightly mix. Arrange the remaining dough balls on top.

Apple dumpling BitesPlace the skillet in a 350 degree oven and bake for 25 - 30 minutes or until the mixture is bubbly and the dumplings are cooked through and lightly browned.

Apple dumpling BitesCool slightly and serve with or without vanilla ice cream.

Ingredients

10 - Rhodes dinner rolls, thawed but still cold 
2 - large granny smith or golden delicious apples, peeled and diced 
1 - teaspoon lemon juice
1 - teaspoon vanilla extract 
2/3 - cup heavy cream 
5 - tablespoons butter, cut into small pieces
1 - cup brown sugar
1 1/2 - tablespoons flour 
1 1/2 - teaspoon cinnamon, separated 
3 - tablespoons sugar 

Instructions

Peel and dice apples and place into a large oven safe skillet (I used my 10 inch cast iron skillet). Add the lemon juice, vanilla extract, heavy cream and butter. 

In a separate bowl, add the brown sugar, flour and 1 teaspoon cinnamon, mix to combine and sprinkle over the apple mixture. Lightly stir until all the ingredients are blended together.

cooks note :You can certainly prepare the apple filling in a skillet, pour the filling into a 13 x 9 inch pan and then add the dumplings and bake.

Preheat oven to 350 degrees. In a small bowl combine the sugar and remaining 1/2 teaspoon cinnamon and set aside. Cut each thawed roll into fours and roll each of the dough pieces into a ball. 

Roll each dough ball into the cinnamon sugar mixture. Add half of the dough balls into the apple mixture and lightly mix. Arrange the remaining dough balls on top. 

Place the skillet in a 350 degree oven and bake for 25 - 30 minutes or until the mixture is bubbly and the dumplings are cooked through and lightly browned.  

Cool slightly and serve.  

Cook's Note: 4 small apples can be substituted for large apples. Serve these apple dumpling bites with or without vanilla ice cream.

This looks so good! Apples aren't my favorite fruit, but the thought of the dumplings, the apples, and the wonderful sauce--wow!
