These Short Cut Chocolate and Pecan Rolls Recipe are the perfect thing to make the night before for a brunch.  Most of the work is done by the folks at Rhodes Bread and you can have these  homemade Short Cut Chocolate and Pecan Rolls in the morning.   When you don't have time to make yeast dough from scratch, I like to use Rhodes White Bread for short cut recipes like these breakfast rolls.  After you see how simple these are going to be to make, you will wonder why you ever bought the cinnamon rolls in a tube. 


Allow one log of bread dough to defrost per the directions on the package and roll out onto a nonstick surface or a floured countertop, 

Meanwhile make the sugar and butter mixture that will give these rolls the perfect gooey flavor and look. 


Carefully spread the butter and sugar mixture onto the rolled out dough making sure you spread it evenly. 

Top the butter mixture with the pecans and chocolate chips.  Are you drooling yet? 


This is the hardest part, rolling them up!  Really it's not hard but just accept that you will probably have an uneven log. 


With a serrated knife cut 12 pieces and place in a baking pan to rise unto you are ready to bake them.

We made these the day before.  We allowed the dough to rise about 2 hours than put them in the fridge.  While the oven preheats take the rolls out to reach room temp and rise a little more. 


Once they are baked they are ready for an amazing breakfast treat.  NO work for you brunch day for these sweet gems, just tasked with eating one. 

I misread the original recipe and used the entire butter mixture on the dough, but you should reheat the remaining butter sugar mixture the next day as well and pour over these sweet rolls. 

No one is going to even know that you took a short cut for these Chocolate and Pecan Rolls Recipe.  I would recommend reheating any leftovers a few seconds in the microwave for the right out of the oven taste.

Ingredients

1 Rhodes Yeast bread loaf, thawed to room temperature
1/2 cup butter
1/2 cup brown sugar
1/2 cup light corn syrup
1/3 cup chocolate chips
1/3 cup chopped pecans
1/3 cup brown sugar

Instructions

Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12x16-inch rectangle. Combine butter, brown sugar and corn syrup in a small pan. Let come to a boil over medium heat. Allow to boil for 1/2 minute and then remove from heat. Let sit until slightly cool.

Spread half of the sauce over dough. Combine chocolate chips, chopped pecans and 1/3 cup brown sugar. Sprinkle over dough. Roll up starting on a long side. Cut rolled dough into 12 equal pieces and place in sprayed 9x13-inch baking pan. Cover with plastic wrap and let rise until double in size.

Remove wrap and bake at 350°F 12-15 minutes or until golden brown. Drizzle remaining sauce over warm rolls.
