Oh pizza how I love thee so. Just as much as pizza, I also love garlic. In fact, I love garlic so much that when a recipe calls for 'x' amount of cloves, I'll throw in 2-3 more. Just because. Because garlic is worth it. When I learned of this Rhodes Roasted Garlic Pizza I couldn't have been more excited to try it out. I mean pizza + garlic = match made in heaven. You get my point by now I'm sure. Not only that, it was another one of those fabulous Rhodes recipes that has a simple ingredient list. Less than 10.. which sounds like a lot - but that includes salt, pepper, and red pepper flakes. Those are essentially freebies if you ask me. The only thing I needed that I didn't happen to have on hand was the frozen spinach (we always buy ours fresh) and the ricotta. Now that I have some ricotta left over you BETTER believe I'm going to be making my One Pot Savory Turkey Meatballs. Yea baby!

Show of hands how many of you have tried roasting garlic before? Did you see my teaser on Instagram last week? Roasted garlic is no lie one of the best smelling things that's ever graced my kitchen. It's super simple and once you try it once, you'll find any and every reason to make it over and over again. Trust me. It worked so wonderfully as the base 'sauce' for this crust. Walk with me as I take you through this super simple yet wonderfully flavorful dinner idea. Jot down anything you don't happen to have on hand so that next time you're at the grocery store you can pick up what you need to make this at home!

Here's what you're gonna need:

  1. 9 Rhodes Dinner Rolls or 6 Rhodes Texas Rolls, thawed to room temperature
  2. 2-3 heads garlic
  3. 2-3 teaspoons olive oil
  4. 1 cup ricotta cheese
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon pepper
  7. 2 cups grated mozzarella cheese
  8. 1 cup frozen spinach, thawed, drained and moisture pressed out
  9. red pepper flakes, if desired

Spray counter lightly with non-stick cooking spray. Combine rolls and roll into an 11x14 inch oval shape. Cover with sprayed plastic wrap and let rest. Peel papery outer covering away from garlic heads. Cut 1/4 inch off the top of each head to expose the tops. Drizzle each head with 1 teaspoon olive oil. Wrap each head in foil and bake in 400°F over 30-40 minutes or until garlic cloves are soft in the middle.

Let cool enough to touch and press the cloves out of their skins into a bowl.

Mash with a fork and add ricotta, salt, pepper and mix together.

Remove wrap from dough and move to sprayed baking sheet. Spread with ricotta mixture. Top with mozzarella cheese. Fluff spinach with a fork and sprinkle over cheese. Sprinkle with red pepper flakes if desired.

Bake at 425°F 15-20 minutes. Slice & enjoy!

Ingredients

9 Rhodes Yeast Dinner Rolls or 6 Rhodes Texas Rolls, thawed to room temperature
