Summer is here and it’s getting to be hot outside! On a hot day, I’d just rather have a yummy deli sandwich rather than a full hot meal. Thanks to Rhodes frozen bread dough, I can make these delicious Onion-Cheese Sandwich Rolls for deli sandwiches without the hassle of making my own bread dough! To make them, I just thawed out the frozen dough and kneaded in some green onions and grated cheese. Start by thawing a loaf of Rhodes White Bread and allow to come to room temperature (each loaf will make 6 large sandwich rolls.) Press the dough flat. Grate 2 cups cheddar cheese and slice 3 green onion tops. (Reserve 1 1/4 cup of the cheese.) Sprinkle 3/4 cup of cheese and the green onions onto the flattened bread dough. Fold the dough over the cheese and onions and knead the until incorporated into the dough. Cut the dough into 6 equal size pieces. Roll each piece of dough into a long hoagie roll shape (about 4" long) and roll into the reserved grated cheese. Be sure they are covered on all sides with cheese. Place the cheese covered rolls on a baking sheet that has been lined with parchment (or silicone baking mat) and then sprayed with non-stick spray. Allow to rise until double in size for about 30 minutes or so. Bake at 400° for about 10-12 minutes Allow to cool on the pan. They should be golden on top and the cheese will be melted. (Helpful hint: Keep an eye on them while baking. You may want to cover them with foil part way through the baking time so the cheese doesn't get too brown.)
After they have cooled, slice the rolls for sandwiches and spread each half with mayonnaise and mustard. Then, some pretty, green ruffle leaf lettuce, juicy tomatoes, dill pickles, cheese slices and your favorite deli meat!
Oh, and by the way, if you have leftover rolls, they make the most amazing toast! Just toast the halves and slather them with butter and eat it for breakfast! Or if you want a really hearty breakfast sandwich, just put on a slice of cheddar cheese, a fried egg and a couple of strips of crispy bacon. Oh my! So delicious!

Onion Cheese Sandwich Rolls
1 loaf Rhodes White Bread, thawed
½ cup chopped green onions
2 cups grated, cheddar cheese, divided
Chop the green onions and grate the cheese. Set aside 1 1/4 cups of the cheese.
Flatten the thawed dough and sprinkle on the green onions and 3/4 cup of the cheese. Knead to incorporate them into the dough.
Cut the dough into 6 equal pieces. Roll each piece into a log shape (about 4” long) then roll into the remaining grated cheese. They should be covered with cheese on all sides and the bottom.
Place on a parchment or silicone baking mat that has been sprayed with non-stick cooking spray and allow to rise about 30 minutes or until doubled.
Bake at 400° for about 10-12 minutes. The cheese will melt and they should be golden on top. (You may want to cover them lightly with foil after about 7 - 8 minutes to make sure the cheese doesn’t get too brown.)
Allow to cool on the pan. Slice lengthwise. Make sandwiches using your favorite meats, cheeses, lettuce, tomatoes, pickles, whatever you love!
