Reuben Bake

If you are wanting to add some corned beef to your Saint Patrick's Day menu, this Reuben Bake is a great way to do it.

This is an easy recipe that comes together in minutes.  Saint Patrick's Day is coming right up and if you like corned beef, you will be sure to like this Reuben Bake.  It is a great combination using Rhodes Bake N Serv Dinner rolls with sauerkraut, thousand island dressing, swiss cheese, and corned beef.  

Ingredients: (for a 9x13 pan)

16 Rhodes Dinner Rolls, thawed to room temperature
16 slices Swiss cheese
1 1/4 pound thinly sliced corned beef
16 ounces sauerkraut, drained
2/3 cup Thousand Island dressing
3 teaspoons caraway seeds
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten

NOTE: The pictures below are made in an 8x8 pan and the recipe is halved.

Thaw out your Rhodes Dinner Rolls so they are soft enough to poke your finger in but still cold.  Place them on a greased surface and roll out into a rectangle to fit the bottom of your pan.  Place in the bottom a sprayed pan.  Prick your dough with a fork all over to prevent the dough from bubbling during baking.  Bake the dough for 10-12 minutes at 350 degrees.

Next, you will begin to layer the ingredients of your Reuben Bake.  Swiss cheese, corned beef, then sauerkraut and thousand island mixture.  

Take the rest of your rolls and roll them into a rectangle then place as the top layer of your Reuben Bake.  Top with an egg wash by lightly beating 1 egg and brushing on top of the dough.  This will add a nice golden top layer with a little crisp.  If you are adding caraway seeds to your recipe sprinkle them on top right before placing in the oven.

Bake at 350 degrees for 20-25 minutes until golden brown.  Let it cool slightly before cutting and serving.

Ingredients

16 Rhodes Yeast Dinner Rolls, thawed to room temperature
16 slices Swiss cheese
1 1/4 pound thinly sliced corned beef
16 ounces sauerkraut, drained
2/3 cup Thousand Island dressing
3 teaspoons caraway seeds
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, beaten

Instructions

Spray counter lightly with non-stick cooking spray. Combine 8 rolls and roll into an 11x15 inch rectangle. Place in the bottom of a sprayed 9x13 inch baking pan. Poke with a fork several times to prevent bubbles from forming. Bake at 350°F 10-12 minutes.

Remove from oven and layer 8 slices of cheese over the baked dough. Lay corned beef on top of cheese. Combine dressing, 1 teaspoon caraway seeds, salt, pepper and sauerkraut. Spread mixture over meat. Layer the remaining 8 slices of cheese over the sauerkraut.

Combine remaining 8 rolls and roll into another 11x15 inch rectangle. Place dough on top of the cheese. Brush with beaten egg and sprinkle with remaining caraway seeds. Bake at 350°F 20-25 minutes or until top is golden brown. Let cool slightly before cutting.
