Pumpkin Slices with Rum Glaze

This is a fun recipe for the Holiday Season. Delicious pumpkin flavor with a fabulous rum glaze.I love the food this time of year.  Pumpkin, apples and all the spices that go with them.  This recipe is a perfect for fall.  I'm not sure whether to call it a sweet bread or a dessert.  It's a definite dessert around my house.  Make this for company and they will be singing your praises for weeks to come.


Start with
8 Rhodes Texas Rolls, thawed but still cold
3/4 cup canned pumpkin
2 T. browned butter, more on that below
1 cup sugar
2 tsp. cinnamon
1/2 tsp nutmeg

This is a fun recipe for the Holiday Season. Delicious pumpkin flavor with a fabulous rum glaze.In a small saucepan over medium heat, cook the butter until it is brown in color.  Make sure you watch it.  It will only take a few minutes.  But be careful not to let it burn.  The browned butter has a richer, fuller flavor.

Combine sugar, cinnamon and nutmeg in a small bowl.  Add browned butter and stir to combine.

 

Pumpkin Slices with Rum GlazeCut each roll in half and flatten into a 3x3 inch oval.  Spread about a teaspoon of pumpkin on both sides of each roll.  Then dip into the sugar mixture.

Pumpkin Slices with Rum GlazeLine them up in a sprayed 9x5 inch loaf pan.  Continue until all rolls are in pan.  Sprinkle remaining sugar mixture over the top.

 

Pumpkin Slices with Rum GlazeCover with sprayed plastic wrap and place in a warm spot in your kitchen.  Let rise until double in size.


 

Pumpkin Slices with Rum GlazeRemove wrap and bake at 350 degrees for 35-40 minutes.  Lightly cover with foil the last 20 minutes of baking to prevent over browning.


While baking, make the Rum Glaze
Rum Glaze
2 T. butter
2 T. brown sugar
1 1/2 T. milk or cream
3/4 cup powdered sugar
1 1/2 tsp. rum flavoring

Pumpkin Slices with Rum GlazeCombine the butter, brown sugar and milk in a small saucepan.  Bring to a boil over medium high heat.

 

Pumpkin Slices with Rum Glaze Remove from heat and add the powdered sugar and rum flavoring.



Pumpkin Slices with Rum GlazeWhen baking is finished remove loaf pan from oven and invert onto serving dish.

Pumpkin Slices with Rum Glaze

Ingredients

8 Rhodes Texas Rolls or 1 Loaf Rhodes Bread Dough, thawed but still cold
¾ cup canned pumpkin
2 tablespoons butter, browned
1 cup sugar
2 teaspoons cinnamon
½ teaspoon nutmeg

Rum Glaze:
2 tablespoons butter
2 tablespoons brown sugar
1 1/2 tablespoons milk
3/4 cup powdered sugar
1 1/2 teaspoons rum flavoring








Instructions

If using loaf, slice into 16 thin pieces. If using rolls, cut each roll in half and flatten into a 3x3-inch oval.

Combine browned butter, sugar, cinnamon and nutmeg in a bowl.

Spread about a teaspoon of pumpkin onto both sides of each dough piece and then dip both sides into the sugar mixture. Line them up in a sprayed 9x5-inch loaf pan, each piece on its edge, to make a loaf shape.

Sprinkle any remaining sugar mixture over the top of the slices. Cover with sprayed plastic wrap and let rise until double in size.

Remove wrap and bake at 350°F 35-40 minutes. Cover with foil last 15 minutes of baking to prevent over browning. While baking, combine the butter, brown sugar and milk in a sauce pan and bring to a boil.

Remove from heat and add the powdered sugar and flavoring. Drizzle over slices after baked.
