Pizzanini

Switch up your next pizza night with these fun pizza paninis. Rhodes rolls make the pizza dough effortless and the kids will love individualizing their own with their favorite toppings.

Pizza night is a weekly occurrence at both of our houses.  It's a dinner that nobody every complains about and is pretty easy and inexpensive.  We like change up our pizza nights and this was a super fun variation. Pizzanini's

Defrost the Rhodes rolls according to the directions on the package.   For ease in working, you want the dough to be cold, but not frozen when rolling it out.  Preheat a nonstick skillet to medium heat.  Flour or spray grease your work surface and place 2 Rhodes dinner rolls together and roll them out into a flat, thin disc.  Place dough into nonstick skillet and cook for 2-3 minutes per side.  The dough should get nice and bubbly, like in the picture above, when it is ready to flip over.

Once the bread is cooked, spread your favorite pizza sauce in it leaving a 1/2 to 1 inch border all the way around.  Top half with shredded mozzarella cheese, pepperoni, and any other pizza toppings and fold it over.Pizzanini's

Brush the outside lightly with olive oil and sprinkle with garlic salt.  Pizzanini's

Press in a panini press or cook on a griddle until the cheese is melted and toppings heated through.  Pizzanini's

Let cool for a minute or two before slicing and serving.  Enjoy!


Pizzaninis

Ingredients:

8 Rhodes dinner rolls

½ cup pizza sauce (use your favorite or make your own using the recipe below)

2 cups shredded mozzarella cheese

Sliced pepperoni and any other desired pizza toppings

Suggestions include: ham, sausage, pineapple, peppers, onions, olives.

Olive oil, for brushing

Garlic Salt for sprinkling



For the pizza sauce:

1 8 oz can tomato sauce

1 6 oz can tomato paste

1 Tablespoon Italian seasoning

1 teaspoon honey

¼ teaspoon salt


Directions:

Defrost rolls according to directions on package.  Lightly spray a clean work surface with cooking spray or sprinkle with flour.  Combine 2 rolls and roll out into a thin, flat disc.  


To make pizza sauce, combine tomato sauce, tomato paste, Italian seasonin, honey, and salt and mix until combined.


Preheat a skillet to medium heat.  Cook each pizza crust for 2-3 minutes or until golden brown on the outsides and no longer doughy in the center.  


Once bread is cooked, top each pizza with 2 tablespoons of pizza sauce.  Sprinkle mozzarella cheese and place pepperonis on half.  Top with any other desired toppings and fold in half.  


Press in a pre-heated panini press until cheese is melted and toppings are heated thoroughly.  Alternately, you can cook it on a skillet, flipping it over half-way through the cooking time.
