I never cooked much when I lived at home, but going away to school taught me that I still liked to eat, and if I didn’t want to go the top ramen/frozen dinner route, I’d better learn how to cook!

Pepperoni Pizza Roll Ups are a really easy to make, “finger food” snack!  These tasty treats satisfy those pizza cravings we all get every once in a while!

Here are the ingredients that you will need:

8 Rhodes™ Dinner Rolls, thawed but still cold

4 cheese sticks, cut in half lengthwise, then in half again so you have 16 pieces

7 ounce package pepperoni slices

Marinara or ranch sauce for dipping, if desired

Glaze:

2 tablespoons butter, melted

½ teaspoon Italian seasoning

1 tablespoon grated Parmesan cheese

First, combine four of the rolls, kneading them together, and then roll out into a 12-inch circle.  You can do it on your counter, or like me…I did it right on the cookie sheet. Just make sure that you spray the cookie sheet first so it doesn’t stick to it when it bakes. It’s okay if the circle doesn’t look pretty, because they will taste the same in the end!

Use a pizza cutter to cut the circle into eight wedges. Repeat with the other four rolls on another cookie sheet.

Cut up the cheese and get the pepperoni ready.

Now you are going to line up a few pepperonis on the widest edge, and then put a piece of cheese on top.

Start rolling at the wide edge, going all the way down to the point; set it point side down on the sprayed cookie sheet.

Bake at 350° for 10 – 12 minutes, or until they are golden brown.

While the roll ups are baking, combine the melted butter, Italian seasoning and Parmesan cheese in a small bowl.

Brush the rolls with the glaze while they are still warm…these smell so good!  Yum! Making a couple of pans of these give me enough to share with my roommates.  Easy to make, delicious to eat!

Ingredients

8 Rhodes Yeast Dinner Rolls, thawed but still cold
8 cheese sticks cut in half
7 ounce package pepperoni slices
marinara or ranch sauce for dipping, if desired

Garlic Sauce
2 tablespoons butter, melted
1/4 teaspoon garlic powder
½ teaspoon Italian seasoning
1 tablespoon grated Parmesan cheese

Instructions

Spray counter lightly with non-stick cooking spray.

Combine 4 rolls and roll into a 12-inch circle. Repeat with remaining 4 rolls. Cut both circles into 8 wedges. Overlap 3 pepperoni slices onto the wide end of each wedge.

Place one half of a cheese stick on top of the pepperoni. Starting at the wide end roll each wedge to point. Place point down on a sprayed baking sheet. Bake at 350°F 10-12 minutes or until golden brown.

While rolls are baking, combine melted butter, garlic powder, Italian seasoning and Parmesan cheese in a small bowl. Brush rolls with sauce while still warm. Serve with marinara or ranch sauce, if desired.

Looks yummy! These would make a great party appetizer...or I could make a bunch and eat them all by myself!
