We love pizza night at our house. Lately I've been making these personal pizzas, and they are amazing! My kids think it's super cool that they can pick their own toppings and "decorate" their pizza however they want. I love that I don't have to get stuck eating pepperoni pizza for the rest of my life, just because my kids like it.
My pick is always a personal margherita pizza. This pizza is SO fresh and yummy. It's the perfect pizza for Summer, and once you try it, you'll never go back to regular old pepperoni again.
Rhodes White Dinner Rolls Crushed Tomatoes Mozzarella Cheese Fresh Basil Seasonings of your choice
Start by placing your dough out on a greased surface to thaw. When the dough is thawed, but still cold, flatten and stretch the dough out to make your pizza crust.
Place your crusts on a pizza stone or baking sheet.
The great thing about personal pizzas is you can make them however you'd like. I used some crushed tomatoes for my sauce.
Top with shredded Mozzarella cheese.
Then sprinkle some fresh chopped basil on top.
Then can add a few shakes of pizza or Italian seasoning to get a great depth of flavor.
Bake at 450°F 10-12 minutes.

Personal Margherita PizzaServings: 4-6 | Skills: Beginning | Prep Time: 20 min (not including thaw time) | Bake Time: 15-20 min

6 Rhodes Texas Rolls or 12 Rhodes Yeast Dinner Rolls, thawed to room temperature
2-3 roma tomatoes
1 medium ball fresh mozzarella cheese
pizza sauce or thick spaghetti sauce
salt and fresh ground pepper, to taste
Spray counter lightly with non-stick cooking spray. Flatten one Texas roll or 2 dinner rolls combined into a 6-inch circle. Cover with plastic wrap and let rest.
Slice tomatoes and cheese into 1/8-inch thick slices. Cut basil into long strips.
Remove wrap from dough and place circles on sprayed baking sheets. Poke with a fork several times to prevent bubbles from forming and pre-bake at 350°F 5-10 minutes. Remove from oven and top each one with sauce, tomatoes and cheese. Sprinkle with salt and freshly ground pepper. Bake an additional 10-15 minutes. Remove from oven and top with fresh basil.
