Hi, I'm Aimee from Like Mother Like Daughter visiting to share an amazing flatbread recipe. I'm sure you all already knew this, but I had no idea I could make flatbread from Rhodes Rolls and its totally easy too! That's the great thing about baking with Rhodes Rolls is they take all the difficulty out of preparing the dough! These nutty flatbreads have a delicious Rhodes Roll flatbread base, drizzled with honey, sprinkled with crispy bacon pieces and walnuts, and covered in thin slices of brie cheese. They're even a little bit fancy, but still simple enough to make that you could serve them as an appetizer for a great party, or something more casual with close friends too.
So to make them you'll let 8 Rhodes Rolls thaw completely. You'll also need bacon, brie, walnuts and honey. Then using a rolling pin (I thought it was easier with my small rolling pin) you'll roll each roll out on your counter to be about 6 or 7 inches across. Then you'll brush one side of each of your rolls with olive oil. Place oil side down into a frying pan preheated to medium heat. Allow to cook in pan for 1 to 2 minutes till lightly brown. Brush the top side with olive oil and flip. Cook that side the same way. When done frying place each flat bread on a prepared baking sheet. Sprinkle bacon over the tops of each flatbread evenly, then drizzle with honey. Top each with thinly sliced brie cheese pieces and then sprinkle with chopped walnut pieces. Broil the flatbreads for about 2 or 3 minutes until the cheese starts to melt. Remove them from the oven and sprinkle the tops with a little sea salt to taste and serve.

8 Rhodes Yeast Dinner Rolls, thawed to room temperature
1/4 cup olive oil
12 slices cooked bacon, cut in small pieces
7-8 ounces brie cheese, sliced thin
1/2 cup honey
1/2 cup chopped walnuts
sea salt to taste
Spray counter top lightly with non-stick cooking spray. Flatten each roll into a 6-7-inch circle. Brush the tops with olive oil.
Heat frying pan to almost medium heat. Place each flatbread, oil side down, in pan for 1-2 minutes until lightly browned. Brush the other side with oil. Turn and brown that side. Remove from frying pan and place on baking sheets.
Dividing toppings equally between the 8 flatbreads, sprinkle with bacon, drizzle with honey top with cheese and sprinkle with walnuts. Broil flatbreads 2-3 minutes until cheese starts to melt. Remove from oven and sprinkle with sea salt to taste.
