Nacho Bites

These are “Nacho” ordinary appetizers. They are the perfect addition to any occasion.

Nacho Bites

These Nacho Bites are so yummy.  They are the perfect appetizer.  The kids love them for lunch too.  Dip them in salsa, guacamole and sour cream.  Just be sure to make them soon.  The first batch I made were gone before I could get one myself.  For the picky eaters, and I have a few, leave out the onions and jalapeno slices.  For the cheese lovers, add an extra cube or two of cheese.

Here's what you'll need:

20 Rhodes Dinner Rolls, thawed but still cold
1/2 pound lean ground beef
2 Tablespoons taco seasoning
40 1/2 inch cubes cheddar cheese, (I used colby-jack this time)
4 ounce can jalapeno slices, drained
1/4 cup diced onion

First brown the hamburger and add the taco seasoning.  Set aside.

Flatten each roll into a 4 inch circle or square.  Place about 1 tablespoon seasoned ground beef on one side of the flattened roll.  Top with 1-2 jalapeno slices, 2 cubes cheese and 1 tsp diced onion.

Fold over to create a half circle or triangle depending on the shape you started with.  Press edges together to seal.  Place on a sprayed baking sheet.  I like to use parchment paper on my cookie sheet.  It works well too.

Bake at 350 degrees for 15-20 minutes or until golden brown. Although not shown here, they are great served with salsa, sour cream, guacamole.

You will love these little pockets of cheesy, nacho flavored goodness!
