We are coming to the end of pumpkin season [or at least in my book we are]. Before we bid the beautiful season of fall farewell I wanted to share this AMAZING recipe with you. I've recently become more daring in the kitchen. I used to be afraid to wander to far from a recipe until I realized that part of the fun in the kitchen is the experimenting and the challenge of creating.

When I was thinking about what I wanted to post I had a couple of other ideas in mind. I thought a pumpkin crescent of some kind would be yummy, but I wasn't sold on the idea. My next idea was for a pumpkin pull-apart until I realized that the reason I had the "idea" is because Deborah already created a beautiful Pumpkin Pull Bread. So that idea was out. Then, for whatever reason, this idea was born. Mini Pumpkin Monkey Bites.

Ok. I know that looks like a lot of ingredients. It's really not. A lot of it is doubles 1) for the rolls and 2) for the frosting. That's not so bad right? Here's what you are going to need for the rolls: 9 Rhodes rolls, thawed yet still cold, 1/2 c. brown sugar, 1 tsp. pumpkin pie spice, 1/2 c. melted butter. For the frosting you will need: 1/2 c. softened butter, 1/2 tsp. pumpkin pie spice, 1/2 tsp. vanilla, 1 1/2 c. powdered sugar, 1 tbsp. pumpkin puree.

Prepare your muffin tin by lightly spraying with cooking spray; set aside. You will slice each roll into quarters. You can cut them using cutting shears or slice them with a pizza cutter. I can never seem to find my kitchen shears so I opted for the pizza cutter. In a small bowl mix together the brown sugar and 1 tsp. pumpkin pie spice.

You'll dip the quartered roll first in to the melted butter, then in the brown sugar mixture, and lastly place in your muffin tin. Repeat with all of the bread quarters. I did three pieces per cup.

You will end up with 12 full muffin tins. Bake at 350 for 15-17 minutes.

While your rolls are baking, prepare your frosting. Combine the softened butter, pumpkin pie spice, vanilla, powdered sugar, and pumpkin puree. Blend together until creamy with a hand mixer.

When your rolls are cooked, immediately frost with the yummy delicious pumpkin buttercream frosting. You'll want to take them out of the pan relatively quickly before they harden and get stick in there... and you wouldn't want that!

This is also a great way to get rid of any extra pumpkin puree you have laying around. I know that I've been making so many different pumpkin things I had a little hanging around that needed to be used.

Ingredients

Mini Pumpkin Monkey Bites with Pumpkin Buttercream Frosting

1 tbsp. pumpkin puree

Instructions

Prepare your muffin tin by lightly spraying with cooking spray; set aside. In a small bowl mix together the brown sugar and gingerbread spice mix.
slice each roll into quarters. You can cut them using kitchen shears or slice them with a pizza cutter.
dip the quartered roll first in to the melted butter, then in the brown sugar mixture, and lastly place in your muffin tin. Repeat with all of the bread quarters. I did three pieces per cup.
Bake at 350 for 15-17 minutes.
When your rolls are cooked, immediately frost with the yummy delicious pumpkin buttercream frosting. I chose to put my frosting in a ziplock bag to "pipe" on.

Mmmm, monkey bread is one of my favorite treats, but I haven't tried it in mini form. These look so good! And that buttercream frosting. YUM!

Think I'll make these this weekend. Can't wait! I've been trying lots of new pumpkin desserts this season and I do have some pumpkin purée in my frig! :0) Pretty sure I'll be using this frosting on multiple recipes.
