Pizza for breakfast? Absolutely! Shake things up for breakfast by serving a plate full of delicious with a side of fun with our Mini Breakfast Pizzas.
What little kid doesn't love their own personal pizza? My son loves them! So why not extend that to breakfast time too. Your little ones will love these mini breakfast pizzas and you will love how easy they are to make.

I usually have everything I need for the mini breakfast pizzas already in my refrigerator and freezer so that's a plus too.



Mini breakfast pizzas
You will need:
6 Rhodes Dinner Roll, thawed
6 eggs
3 tablespoons of pizza sauce
1 cup of grated cheese, 1/2 cup cheddar, 1/2 cup mozzarella
1 cup cubed cooked ham
Salt and Pepper to taste

 

Mini breakfast pizzas
You will start by preparing the crust. Using a non-stick cooking spray, spray your counter lightly. Combine two Rhodes Dinner Rolls together and roll into a 5 inch circle. Repeat to make desired amount of mini pizzas.

Use a fork to poke each pizza several times. This will prevent the dough from bubbling up as it cooks. If your kids are helping you make the mini breakfast pizzas, this is a fun step for them to help with.
Bake mini pizza crusts at 350 degrees for 10-15 minutes or until golden brown.

Once the crust has finished baking, set aside.
Whisk eggs together and cook over medium heat in a skillet. Cook eggs until they are softly set.
Salt and pepper eggs to taste.

Spread the mini pizzas with desired amount of pizza sauce.

Next you will lightly sprinkle 1 or 2 tablespoons of cheese over the sauce.

Next add eggs and ham.

Sprinkle a tablespoon of cheese over the top.
You can also top with chopped green onions, but my son is a picky eater and won't eat those.

Bake at 375 degrees for 10-15 minutes or until the cheese is melted.

Ingredients

8 Rhodes Yeast Dinner Rolls, thawed to room temperature
8 eggs
salt & pepper to taste
1 tablespoon butter
4 tablespoons pizza sauce or salsa
1/2 cup grated cheddar cheese
1/2 cup grated mozzarella cheese
3 green onions, chopped
1 cup cubed, cooked ham
Italian seasoning, if desired

Instructions

Spray counter lightly with non-stick cooking spray. Combine 2 rolls together and flatten into a 5-inch circle. Repeat with remaining rolls to make 4 mini pizza crusts. Place on a large sprayed baking sheet. Poke each one several times, with a fork, to prevent bubbles from forming.

Bake at 350°F 10-15 minutes or until lightly browned. Remove from oven and set aside.

In a small bowl, whisk eggs. Melt butter in a skillet and add eggs. Cook and stir over medium heat until eggs are softly set. Salt & pepper to taste.

Spread each mini pizza crust with 1 tablespoon pizza sauce or salsa. Combine the cheeses together and sprinkle each pizza with 1-2 tablespoons cheese. Top with eggs, green onions, ham and any remaining cheese. Sprinkle with Italian seasoning if desired.

Bake at 375°F 10-15 minutes or until cheese is nicely melted.
