I love pizza! That's one of my favorite things about always having Rhodes Frozen Bread products in my freezer...I can have a pizza anytime without leaving the confines of my own home! If I don't have all the ingredients for one "flavor", I can make something different. Well, I just figured out some of those basic ingredients I need to add to my "always keep on hand" list. I love hummus and feta, so I usually have those, but the artichoke hearts, roasted peppers and Kalamata olives make a delicious topping for a pretty summer specialty pizza.
Rhodes Mediterranean Pizza
Here are the supplies that you will need:
6 Rhodes Whole Wheat or White Texas™ Rolls, or 9 Rhodes™ Dinner Rolls, thawed to room temperature
3/4 cups garlic seasoned prepared hummus
7.5 ounce jar marinated artichoke hearts, diced
4 ounces crumbled feta cheese
3/4 cup sliced roasted peppers, drained
Kalamata olives, halved lengthwise and drained
Spray counter or silicone mat with non-stick cooking spray. Take the 6 (or 9) rolls and knead them together.
Roll into a 13" circle. Cover the dough with sprayed plastic wrap and let rest for 10-15 minutes. Pre-heat oven to 400°F.
Remove the plastic wrap and transfer the dough to a 12" pizza pan; poke the dough with a fork (a whole bunch!) to keep the crust from bubbling when baking. Pre-bake crust for 8 - 10 minutes.
Gather your toppings together. Make sure to drain off any excess brine, oil or vinegar.
Allow crust to cool slightly. Spread hummus evenly over the crust.
Top with artichoke hearts, feta, peppers and olives.To keep from having any random feta crumbles all over the pan and the crust, I cleaned up any of the little stray bits. Put pizza in oven and bake for an additional 6 - 8 minutes. I think I let my pre-baked pizza crust cool a little too long, so 8 minutes didn't turn the crust a golden brown, so I kept it in for a total of 10 minutes... just keep an eye on it as it bakes.

6 Rhodes Texas Wheat Rolls or 9 Rhodes Yeast Dinner Rolls, thawed to room temperature
3/4 cup garlic seasoned prepared hummus
6.5 ounce jar marinated artichoke hearts, drained and diced
1 cup crumbled feta cheese
3/4 cup sliced roasted red peppers, drained
Kalamata olives, halved length wise
Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 13-inch circle. Cover dough with plastic wrap and let rest for 10-15 minutes. Remove wrap from dough and place on a sprayed 12-inch pizza pan. Poke several times with a fork to prevent bubbles from forming.
Prebake crust at 400°F 8 minutes. Allow to cool slightly then spread hummus evenly over crust. Top with artichoke hearts, cheese, peppers and olives. Bake for an additional 6-8 minutes.
