Lemon Blueberry Sweet Rolls

There is something about Spring and Summer that make me want to make fruity, light pastry treats. Fall in love with these lemon blueberry sweet rolls.

There is something about Spring and Summer that make me want to make fruity, light pastry treats.  I made these lemon blueberry sweet rolls last week and fell in love.  I loved the hint of lemon in every bite with blueberry and the lemon glaze.  I think this is the perfect light treat this season. 


These rolls were so easy to make and required few ingredients, my kind of recipe!

You will need:
12 dinner rolls, thawed to room temperature
4 T. butter, softened
1/3 C. sugar
zest of one lemon (1T)

Spray a clean surface with non-stick cooking spray.  Combine all your rolls and roll into a 12x16" rectangle.  Cover with plastic wrap and let rest.  

Combine butter, sugar and lemon zest and mix well.  Remove the plastic wrap and spread butter mixture over dough.  Sprinkle with blueberries.

Start rolling into a jelly roll style tube.  Pinch the long edge to seal.  With twine, cut into 12 equal slices.


When all the pieces are cut, lay each piece, cut side down in a sprayed muffin tin.  Cover with sprayed plastic wrap and let rise until double in size.

Now it's time to remove the plastic wrap and bake.  Bake in a 350 degree oven for 15-20 minutes.  Cover with foil after 10 minutes if necessary to prevent over-browning.  

While the rolls are baking, make the glaze:

2 C. powdered sugar
2 T. lemon juice
1 1/2 T. butter, melted
1 T. milk
zest of one lemon (1T)

Mix will and when rolls are out of the oven and still warm, brush the glaze on top of them.  Let cool and serve.

Ingredients

12 Rhodes Yeast Dinner Rolls, thawed to room temperature
4 tablespoons butter, softened

zest of one lemon (1 tablespoon)
1 cup fresh blueberries

Glaze:
2 cups powdered sugar
2 tablespoons lemon juice
1 1/2 tablespoons butter, melted
1 tablespoon milk
zest of one lemon

Instructions

Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12 x 16 inch rectangle. Cover with plastic and let rest. Combine butter, sugar and lemon zest and mix well. Remove wrap and spread butter mixture evenly over dough. Sprinkle with blueberries.

Begin rolling, on a long side jelly roll style. Pinch the long edge to seal. Cut into 12 equal slices and lay each piece, cut side down in a sprayed muffin cup. Cover with sprayed plastic wrap and let rise until double in size.
