Hearty Breakfast Bake

Anything to make life easier right?  I love that you can prepare this Hearty Breakfast Bake the night before so it will be all ready to bake in the morning.


Today I am sharing with you how to make the Rhodes Hearty Breakfast Bake. This is a great dish for a family breakfast or brunch and is sure to fill you up. I love that you can prepare this dish the night before so it will be all ready to bake in the morning. Anything to make life easier right?

Okay, lets get started. Here are the ingredients you will need.

12 Rhodes Dinner Rolls, baked
3 tablespoons vegetable oil
2 pounds sirloin, cut into 1 inch cubes
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
2 minced garlic cloves
1 onion, chopped
2 red bell peppers, chopped
8 ounces grated Pepper Jack cheese
8 ounces grated sharp cheddar cheese
1 1/2 teaspoons Italian seasoning
12 large eggs
2 cups half and half
1/2 cup milk

Start by cutting the dinner rolls into 1 inch cubes and place in the bottom of a sprayed 9 x 13 inch baking dish. I like to use my kitchen scissors for this, it makes it super easy.

Next heat the oil in a large skillet on medium high heat. Sprinkle salt and pepper on sirloin cubes and brown for about 5 minutes, stirring often. Add the garlic, onion, and bell pepper and cook until vegetables are tender.

Spread meat mixture over the bread in the 9 x 13 dish. Sprinkle with both cheeses and Italian seasoning.

In a bowl beat the eggs, half and half, and milk and pour evenly over the bread and meat mixture. Cover and refrigerate for at least 8 hours. I like to make this the night before I plan on serving it so I can wake up in the morning and it's all ready to bake.

Remove from fridge and let stand at room temperature for 30 minutes before baking. Bake at 350 degrees Fahrenheit for 70-80 minutes. Cover with foil after 50 minutes to prevent over browning. Let stand 10 minutes before serving. Enjoy!

When buying your sirloin ask your butcher to cut it in the cubes for you. They should do this free of charge and save you a little bit of time and energy.
