Grilled Chicken and Spinach Pizza

With temperatures rising with the summer heat, there's no better time to grill to your heart's content. Fire up your grill and let's make a PIZZA! Delicious flavors that blend together ...

We've been grilling as much as we can. During the summer time it's so much more enjoyable to grill rather than be stuck in the kitchen making dinner. Grilled pizza is super simple and extremely versatile. You can use any toppings you like and make it exactly how you want. You can make one large pizza or several personal pizzas. Totally customizable. I chose to top mine with spinach, chicken and onions and the flavors came together wonderfully. You'll have to try this and use your favorite combination. Enjoy!

 

Gilled Chicken Spinach Pizza

1 loaf Rhodes Bread, 9 Rhodes™ Dinner Rolls, or 6 Rhodes Texas™ Rolls, (thawed to room temperature)
6 oz. boneless, skinless chicken breast, (cooked)
1/2 c. ranch dressing, 1/2 onion (sliced)
1 tbsp minced garlic, 1 c. fresh spinach
1 1/2 c. grated mozzarella cheese
1 /4 c. Parmesan cheese
1 tsp. garlic salt
1 tbsp. fresh parsley

Saute onions and garlic in a tbsp or two of olive oil on medium heat until almost caramelized.

Roll Rhodes into a large rectangle... or triangle... or whatever shape you end up with (hee hee). It all ends up edible no matter what shape you roll it into :)

Lightly spray the dough with a coat of Pam before putting on the grill. WATCH CLOSELY!!! It will cook REALLY fast! If you aren't careful, all of your patience in letting the dough thaw could be torched in an instant. Cook for a couple of minutes on each side on medium/low.

When the dough is done, spread a layer of ranch dressing. Enough to lightly cover the dough.

Next, add your shredded cheese (liberally). Add more/less to suit your liking.

Follow that with fresh spinach.

 

 

With temperatures rising with the summer heat, there's no better time to grill to your heart's content. Fire up your grill and let's make a PIZZA! Delicious flavors that blend together to create taste bud bliss.

Top with Parmesan cheese/garlic salt/parsley mix, sliced cooked chicken, onions and garlic. Top with a little more cheese if you so desire.

Cover grill and let everything melt together to become a crispy crust/warm melty topping deliciousness :) Again... WATCH CLOSELY. You don't want to lose your dinner at this point. Remove from grill. Slice. Enjoy!
