Garlic Mashed Potato Pizza

Savory garlic mashed potatoes on a pizza crust. What a great idea!

Use Rhodes to make a pizza out of potatoes that is super delicious.

When I go out to a restaurant to eat, one of my favorite sides on the menu is the loaded mashed potatoes. Sometimes we order an appetizer to share and then get the loaded mashed potatoes as our main course. It never occurred to me that I could make loaded potatoes that are just as delicious at home...I know, kind of silly. But it certainly never occurred to me to make a pizza out of them!

 

Garlic Mashed Potato Pizza

6 Rhodes Texas™ Rolls or 9 Rhodes™ Dinner Rolls, thawed to room temperature

2 Tablespoons olive oil

3 large red potatoes, or 6 - 8 small red potatoes

4 cloves garlic, minced

1/4 cup sour cream

2 Tablespoons butter

Salt and pepper to taste

12 strips lean bacon, cooked, drained and cut up OR 1 - 2.8 to 3 ounce pouch of REAL bacon bits

Broccoli florets

8 ounces shredded mozzarella

Combine the rolls and knead together; roll out into a 13" circle. I can't seem to get it transferred to a pizza pan successfully, but I really like to roll it out on a silicone mat and bake it on a sheet pan. Brush the olive oil over the bread dough.

Clean, cube and boil the potatoes until tender; you can peel the potatoes if you like, but I liked the added color of the skins. Drain and add the butter, sour cream, minced garlic, salt and pepper to taste.

Mash the potatoes until mostly smooth - I liked them a little chunky.

 Spread the potatoes over the rolled-out roll dough.

Bake at 375°F for 15 - 20 minutes.

This recipe sounded a little strange to me at first, but it was so delicious hot out of the oven and just as good warmed up the next day! We have a lot of leftovers these days with the boys out of the house...note to self: cook smaller amounts! But these leftovers? Lunch for work is good to go!

Garlic Mashed Potato Pizza

Ingredients

9 Rhodes Yeast Dinner Rolls or 6 Rhodes Texas Rolls, thawed to room temperature
2 tablespoons olive oil
3 large red potatoes
4 cloves garlic, minced
2 tablespoons butter
1/4 cup sour cream
salt & pepper
12 slices lean bacon, cut in pieces
8 ounces grated mozzarella cheese
sliced broccoli florets

Instructions

Spray counter lightly with non-stick cooking spray. Combine rolls and flatten into a 13-inch circle. Place on a 12-inch sprayed pizza pan. Brush dough with olive oil and allow to rest while preparing potatoes.

Clean cube and boil potatoes until they are tender. Drain potatoes and add minced garlic, butter and sour cream. Mash together adding salt and pepper to taste. Spread potatoes evenly over pizza dough. Top with bacon, cheese and broccoli.

Bake at 375°F 15-20 minutes.
