Featured Recipe: Fruit Bruschetta

Since the weather has not been cooperating in Utah, I decided it was time to bring Spring to my home with fresh fruit!  I asked my sweet niece Avery to help me with this delicious recipe, because my children are all of the Canine persuasion.


Bring Spring to your home with fresh fruit in this Fruit Bruschetta.

This recipe is super easy, and perfect for an after school snack. 

Ingredients:

6 Rhodes Warm-N-Serv™ Crusty Rolls, thawed
2 tablespoons butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon
fresh diced, strawberries, pineapple & kiwi
1/2 cup sour cream
2 tablespoons honey
1 teaspoon lemon zest
2 teaspoons fresh lemon juice


All you need is to grab a bag of Rhodes Crusty Rolls and set them out on the counter to thaw.  The great thing about these rolls is that they are already partially baked, so there is no rise time.

After the rolls thawed (about 30 min) I cut them into 4 pieces each.  I did cut off the tiniest bit off the end of each roll, so they would sit flat on my baking sheet.

Avery brushed each roll piece with melted butter.

Then she sprinkled (I use this term loosely) them with the cinnamon sugar mixture.

Next we put them in our pre-heated 400° F oven for 5-10 minutes.  Remember, the longer you bake them, the crispier they will become.

While the rolls were baking, we diced up (and taste tested) some fresh kiwi, pineapple and strawberries.

Isn't that just pretty?

Mix the fruit together, and set aside.  We had a separate mixture for Avery, because she doesn’t like Kiwi.

We pulled the rolls out of the oven, and placed them on a cooling rack.  You will notice I put wax-paper under the rack for easy clean-up.

While the rolls were cooling I zested 1 lemon and then juiced it. If you're not familiar with what zesting a lemon means, it's just grating off the outer portion of the peel. You can get a fancy doo-dad like in the picture, or a small grater works just fine too.

Avery mixed sour cream, honey, and the lemon zest and juice to make a yummy citrus topping for our bruschetta.

All we have left is assembly.  Put one tablespoon of fruit mixture on each bruschetta, and then drizzle on the citrus topping.  You will notice from the photo that the wax paper was a great idea!

Celebrate Spring with this easy to make Fruit Bruschetta, delicious and bursting with flavor.

Ingredients

6 Rhodes Warm-N-Serv® Artisan French Rolls, thawed
2 tablespoons butter, melted
2 tablespoons sugar
1/2 teaspoon cinnamon
fresh diced, strawberries, pineapple & kiwi
1/2 cup sour cream
2 tablespoons honey
1 teaspoon lemon zest
2 teaspoons fresh lemon juice

Instructions

Slice crusty rolls into 1/2-inch thick slices. Place on a baking sheet and brush with melted butter.

Combine sugar and cinnamon and sprinkle over slices.

Bake at 400°F 5-10 minutes or until edges are toasted. Set aside to cool.

Place strawberries, pineapple and kiwi in a bowl and toss gently to combine. Place about 1 tablespoon fruit mixture on top of each toasted roll slice.

Combine sour cream, honey, lemon zest and lemon juice and mix well. Drizzle over fruit.
