Chicken Salad Sandwiches are a summer time staple in our family. They are so quick and easy and also one of those great "get together" meals. I mean really, can you think of a baby or bridal shower and not think about chicken salad sandwiches?

Our PTA (Parent Teacher Association) recently provided dinner for the teachers at our elementary school during Parent Teacher Conferences and served chicken salad sandwiches.  They are also one of those things you can change up with all different kinds of ingredients. This is what I was able to do with this sliders recipe from Rhodes. I mixed it up just a little to suit my families taste buds.

This is what you'll need to get started:

Rhodes Warm-N-Serv™ Soft Dinner Rolls or Whole Wheat Rolls
2 tablespoons lemon juice
1/2 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
3 1/2 cups chopped cooked chicken
1 cup diced celery
1 cup pineapple tidbits, drained well
1 teaspoon tarragon
1/2 cup slivered almonds, toasted
lettuce


Start with baking the rolls following the directions on the package. I decided to use the whole wheat rolls. So delicious! While the rolls were baking, I gathered all the other ingredients together. I had bought some boneless skinless chicken breast.  I like the flavor of grilled chicken so I grilled my chicken outside on the grill. I then shredded the chicken once it had cooled off. I seasoned the chicken with salt, pepper, and seasoning salt.

In a small bowl, combine lemon juice, mayonnaise, salt and pepper. (I used light mayo.)

In a larger bowl, combine mayonnaise mixture with chicken, celery, pineapple, tarragon and almonds. Here are the little changes that I made to the recipe: I used some garlic powder instead of the tarragon, added red grapes instead of pineapple, and left out the celery as my children are not a fans.

By that time the rolls were ready to come out of the oven. They looked beautiful and smelled even better! Let them cool for a bit.

Once, my chicken salad was all mixed up and my rolls had cooled off, I placed a piece of lettuce on the roll and filled them with the chicken salad. Presto... DINNER!

With School starting and all the kids activities going on, it was really nice to have this meal cooked a head of time. Thursdays are our "everyone eats when and if they can" night. So having the Chicken Salad in the fridge for my 12 year old when he got back from Soccer practice while the rest of the family were at their various activities really helped.

I keep the chicken salad in the fridge and any time someone is hungry and ready to eat, they can just make a sandwich on our Rhodes Rolls. Here is picture of my oldest son that just started 7th grade enjoy this quick and easy meal.

Ingredients

Rhodes Warm-N-Serv® Yeast Dinner Rolls or Whole Wheat Rolls
2 tablespoons lemon juice
1/2 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
3 1/2 cups chopped cooked chicken
1 cup diced celery
1 cup pineapple tidbits, drained well
1 teaspoon tarragon
1/2 cup slivered almonds, toasted
lettuce

Instructions

Bake rolls following directions on package. In a small bowl, combine lemon juice, mayonnaise, salt and pepper.

In a larger bowl, combine mayonnaise mixture with chicken, celery, pineapple, tarragon and almonds. Split rolls and fill with chicken salad and lettuce.

This sounds awesome, but you could smear peanut butter on rhodes and it would be terrific!
