Breakfast is the most important meal of the day! I'm always looking for unique breakfast ideas to make breakfast exciting! This delicious cheesy bacon and egg roll breakfast is a recent favorite!Egg Bacon and Cheese RollsPretty much anything with cheese and bacon will have the troops ready and waiting in no time! Bacon lovers unite... In all seriousness, who can resist bacon infused bread?

The combination of bacon, eggs and cheese plus carbs is just perfect. This is a great way to use those leftover Rhodes rolls from dinner last night!

If you don't have leftover rolls, you will want to thaw some dough so that you can make these stat! I combined to rolls to make one larger roll for this recipe. Let raise for a couple hours.

Bake the rolls! While they are baking weave the bacon... Yum! Just thinking about bacon makes me hungry. Once the rolls are done, bake your weaved bacon at 400 for 10-12 minutes!

Let rolls and bacon cool. Carefully cut the top of your roll off and pull out the insides. Let the kids (or yourself) snack on the insides.

Fill the roll with your bacon basket.

Crack an egg inside and season with salt and pepper.

Top with cheese.

Add the top of the bread back on your roll and you're good to go!

Wrap in tinfoil and bake for 15-20 minutes or until eggs are cooked just the way you like them!

Makes 4 breakfast rolls

Ingredients:

8 Rhodes dinner rolls

12 slices bacon

4 eggs

1/2 cup cheese

salt and pepper

Directions

1. Thaw 8 rolls, combine 2 rolls to make 4 large rolls. Let raise until double and then bake at 350 for 10-12 minutes.

2. While they are baking, weave your bacon. Lay 3 slices of bacon flat and cut them in half. Take 3 halves and lay then horizontally, place the other 3 halves on top and weave them. Bake at 400 for 10-12 minutes.

3. After the rolls and bacon are cooled, carefully cut the top of your roll off and pull out the insides. Fill the roll with your bacon basket. Crack an egg inside and season with salt and pepper. Top with cheese and add the roll back on top.

4. Wrap in tinfoil and bake for 15-20 minutes or until eggs are cooked just the way you like them!

12 slices bacon
