This Creamy Chicken & Dumplings is as good as comfort food gets! The soup is creamy, flavorful, and full of chicken and vegetables. And, it doesn't get simpler than using Rhodes dough for the perfect fluffy dumplings!

Okay, confession time... When Rhodes asked me to feature their recipe for Chicken and Dumplings, I'd never made it before! I love this comfort food, but I've always been afraid that dumplings would be too complicated to make myself. I am so glad I gave it a try! This recipe is so incredibly easy and my whole family devoured the end result. 

Creamy Chicken & Dumplings Ingredients

This recipe uses the simplest ingredients, you probably already have most of them in your kitchen. You'll just need a pack of Rhodes frozen dough (I love the Cracked Wheat Rolls and they worked great in this recipe), chicken broth, chopped carrots, onions and celery, milk, flour, poultry seasoning, and cooked shredded chicken. I even used a rotisserie chicken, which is a great way to make this recipe even easier.

Creamy Chicken & Dumplings

Once you have your shredded chicken, chopped vegetables, and thawed roll dough ready, you'll just need a large pot and 35 minutes for it all to simmer. 

First, bring the chicken broth to a boil. Add the onions, celery and carrots. Turn the heat down to simmer. In a small bowl mix together the milk, flour and poultry seasoning until smooth. Add this mixture to the broth and veggies and let simmer for 10 minutes. 

Then, all you have to do is cut each roll in half and sprinkle them with a little flour. Add the chicken to the pot and then place the roll halves on top of everything. Simmer for 20 minutes covered and then 3-5 minutes uncovered. 

I was so excited to dish this recipe up and find the perfect dumplings - fluffy and flavorful! Who knew you could get that with just some simple roll dough!

Makes 6 servings

 

Ingredients:

6 Rhodes Cracked Wheat Rolls, thawed but still cold

5 cups (40 ounces) chicken broth

3/4 cup milk

3 tablespoons flour

1 teaspoon poultry seasoning

1 cup diced onion

3 celery ribs, chopped

2 medium carrots, sliced

3 cups cooked shredded chicken

salt and pepper to taste

 

Instructions:

  1. Bring the chicken broth to a boil in a large soup pot. Add the onions, celery and carrots. Turn the heat down to simmer. 
  2. In a small bowl mix together the milk, flour and poultry seasoning until smooth. Add to the broth and vegetable mixture and stir well. Let simmer for 10 minutes.
  3. Add the shredded chicken to the pot.
  4. Cut each of the rolls in half. Sprinkle each half with flour (this prevents sticking and thickens the soup). Place each of the roll halves on top of the mixture in the pan. Spoon liquid on the tops of the rolls and cover with lid.
  5. Simmer 20 minutes covered. Uncover and simmer 3-5 more minutes or until the dumplings are cooked through.
