Hello again! It's Amber, from Dessert Now, Dinner Later! I'm back with another fun creation with Rhodes rolls! It's summer, and there is nothing I love more than citrus desserts, so today I am sharing the recipe for these coconut lime pull apart rolls! Coconut lime is one of my favorite combos! I've made Frozen Coconut Limeade, Coconut Key Lime Bars, Macaroons, and Popsicles, to name a few. I'm just a little obsessed. ;)

Coconut Lime Rolls! Coconut and Lime together! What a great summer treat!

This recipe was a no brainer. It's tangy, sweet, and simple. I mean, how can any Rhodes recipe not be simple? Rhodes rolls make everything easier! Start with 12 Rhodes rolls, thawed, in a greased 13x9-inch pan, 1/4 cup sugar, 1/2 cup sweetened coconut flakes, 2 limes, 3/4 cup powdered sugar, and 3 Tbsp butter (not pictured).

Cut each roll in half with scissors. Place the cut side up; this helps the coconut lime sugar mixture stick to the rolls better.

Place sugar, sweetened coconut flakes, and the zest of 2 limes in a food processor. Pulse until combined.

Melt 3 Tbsp of butter; pour it over the top of the cut rolls, then sprinkle the coconut lime sugar on top.

Cover the rolls with greased plastic wrap and allow them to rise until puffy and touching each other.

Remove plastic wrap. Bake at 350 degrees Fahrenheit for 20 to 25 minutes or until golden brown. Meanwhile, prepare glaze by combining 3/4 cup powdered sugar with 1 1/2 Tbsp fresh lime juice; about 1 lime.

Drizzle glaze over rolls and enjoy warm!

Ingredients

12 Rhodes White Dinner Rolls, thawed
zest of 2 limes
¼ cup granulated sugar
½ cup sweetened coconut flakes
3 Tablespoon butter, melted
¾ cup powdered sugar
1 ½ Tablespoon lime juice (about 1 lime)
