Rhodes has a new, fantastic cooking site for kids...Rhodes Kids Baking!  It is a great place for kids, and adults alike, to get delicious recipes and have fun, too.  My boys love to help in the kitchen and to simplify things...I often use Rhodes Bake-N-Serv Frozen Dinner Rolls or Anytime Cinnamon Rolls.  To celebrate good mid-term report card grades, we made these amazing Mini Cinnamon Roll Chocolate Pecan Pies.

Do you like icing on your cinnamon rolls?  One of my boys doesn't so we leave it off and let those that wish to indulge in the yummy cream cheese icing, that comes with Rhodes Anytime Cinnamon Rolls, add their own.

Warm out of the oven...ooey and gooey and oh, so yummy!  There is sweet chocolaty pecan filling under all those toppings my son went overboard with.

Rhodes Anytime Cinnamon Rolls, freezer to oven to table in 30 minutes...it doesn't get any easier than that!  We love them as they are, cooked in the waffle iron and in pies!  Apple and pumpkin pie filling are easy to use and taste wonderful, too, inside a cinnamon roll crust!

The chocolate pecan filling only takes a minute to mix together.  This makes enough for four pies.  I put the other two in a freezer bag, labeled with instructions,  to bake individually.

My boys think the best part of this recipe is pressing the cinnamon rolls in the mini pie or cake pans, it's a little squishy.  You can dab some of the cinnamon off if there seems too be too much.  Of course, you could forgo all the fun and put a cinnamon roll in the pan, push the middle down and add pie filling to the center (adjust baking time if you make it this way).  What fun is that?  We like squishy!

Bake in the oven 14 to 18 minutes.  Let rest on racks in pan for a couple of minute and remove from pan, sliding a butter knife around the edges to loosen.

Top with accompanying cream cheese icing, powdered sugar and/or additional pecans and mini chocolate chips....or not.  Enjoy!

Cinnamon Roll Chocolate Pecan Pie

Cinnamon Roll Chocolate Pecan Pie

Ingredients

4 Rhodes Bake-N-Serv Anytime Cinnamon Rolls
Cream Cheese Icing accompanying cinnamon rolls
1 egg, beaten
1 Tablespoon melted margarine
1/2 teaspoon vanilla extract
2/3 cup light brown sugar, plus a few for garnish
1 cup pecans, chopped, plus a few for garnish
1/3 cup mini chocolate chips flour for dusting hands

Instructions

Thaw Rhodes Bake-N-Serv Anytime Cinnamon Rolls but leave cold.
Preheat oven to 375 degrees F.
Spray 4" pie or cake pans with non-stick spray and flour like Baker's Secret.
Whisk egg, melted margarine, vanilla extract and brown sugar together.
Stir in chopped pecans and mini chocolate chips.
Flour hands. Press one cinnamon roll in prepared pan, on the bottom and up the sides. This can be squishy fun!
Fill cinnamon roll lined mini pans with pecan filling, just barely to the top and put pans on a cookie sheet. Bake 14 to 18 minutes, depending how much filling is in pan.
Cool on wire rack. Enjoy!
