Hello again! It's Amber from Dessert Now, Dinner Later! I'm back with a must-try recipe! This Cinnamon Pumpkin Crumble is ridiculously delicious and so simple to make! It's a cross between breakfast and dessert, and when you share with friends, you can bet they will be asking for the recipe!
I took this to a church party and several people who got a taste were asking for the recipe! The chunky crumble on top is my favorite part! I love streusel!
All you need are 9 Rhodes Anytime! or Traditional Cinnamon Rolls. The Anytime! cinnamon rolls can be used right away. The Traditional cinnamon rolls will need 2 hours at room temperature to thaw and slightly rise before proceeding with the rest of the recipe. You can see in the picture below that I used the Traditional cinnamon rolls.
You will also need pumpkin pie mix (not pumpkin puree), cinnamon, nutmeg, butter, brown sugar, flour, old fashioned oats, chopped pecans, one packet of cream cheese frosting (that comes with the cinnamon rolls), and some caramel ice cream topping.
Arrange frozen rolls in 3 rows of 3 in a sprayed 9 x 13-inch baking pan. It's tempting to use all 12 rolls, but there won't be room, I promise. Just bake the extra 3 rolls in a round cake pan separately.
Combine 2 cups pumpkin pie mix, 1/2 tsp cinnamon, and 1/4 tsp nutmeg. Spread evenly over and in between the rolls.
Combine 1/2 cup softened butter, 1/2 cup brown sugar, 1/2 cup flour, 1 cup old fashioned oats, and 1 cup chopped pecans. Sprinkle over pumpkin pie mixture.
Bake at 350°F for 40 minutes. The cinnamon rolls will puff up in the centers, so you should be able to tell that the bread is baked through where the rings rise up while baking. Drizzle with 1 packet cream cheese frosting and caramel topping while still warm.
I'm not joking when I say this is flipping delicious! This is seriously a decadent breakfast or fancy dessert! Make it for your family today!

1/2 cup flour
1 cup old fashioned oats
1 cup chopped pecans
1 packet cream cheese frosting (included with rolls)
1/4 cup caramel ice cream topping
Arrange frozen rolls in 3 rows of 3 in a sprayed 9 x 13-inch baking pan. Combine pumpkin pie mix, cinnamon and nutmeg. Spread evenly over rolls.
Combine crumble ingredients and sprinkle over pumpkin pie mixture.
Bake at 350°F 40 minutes. Drizzle with 1 packet cream cheese frosting and caramel topping while still warm.
