When the temperatures heat up I hate to turn on my oven for too long which is one reason I love this amazing Chicken Cesar Salad Pizza!!! You a handful of frozen dinner rolls thaw until just soft to make your pizza crust and bake it for only 15-20 minutes. Since the crust can be made ahead of time, you can totally make the crust early in the morning or right before bed when it's cooler outside. Add zesty cream cheese mixture in place of traditional pizza sauce, your favorite Cesar salad toppings, and some cooked chicken and your pretty much set! I love to top it off with a sprinkle of grated Parmesan cheese and a drizzle of my favorite Cesar salad dressing.It's a wonderful summer recipe because it's so light and fresh! You could easily use it as an appetizer by cutting it into smaller serving pieces. I know you're dying to know how to make this!
First you'll set out 9 rolls to thaw. You'll let them thaw for about an hour, or just until they are soft.
When they are soft, combine them and place them on a floured surface. like so...
Now you're going to roll your dough into a 13-inch circle and place it on a sprayed pizza pan. Fold in the ends and prick the crust with a fork to avoid bubbles.
Now bake it at 375 degrees for 15-20 minutes or until golden brown.
Let cool. Meanwhile prepare your filling by mixing together some softened cream cheese with your favorite Cesar salad dressing and some grated Parmesan cheese. Spread this over your cooled crust.Now for the rest of your toppings. I sprinkle some of the chicken over the cream cheese mixture, because it sticks better that way, then add my favorite Cesar toppings. I used romaine lettuce, and sweet bell peppers here, but love to add cucumbers, sliced banana peppers, tomatoes, and sometimes even olives. I top this all with some more chicken, because it looks pretty, sprinkle it with grated Parmesan, and give it a good drizzle of Cesar dressing. Slice and serve. Ohhhh, it's so yummy!

Chicken Cesar Salad
9 frozen dinner rolls
16 oz. 1/3 fat cream cheese, softened
½ cup Cesar salad dressing, plus more for drizzling
1/3 cup fresh grated parmesan cheese, plus more for garnish
2 1/2-3 cups chopped cooked chicken
3 cups chopped romaine lettuce
1 medium or (or 3 or 4 small) sweet bell peppers, diced
Place dinner rolls on a sprayed pizza pan (or cured pizza stone) and let sit until soft, about an hour. Combine rolls into a ball and roll into a 13-inch circle on a floured surface. Place dough prepared pizza pan and bake at 375 degrees for 15-20 minutes or until starting to turn golden brown. Let cool.
Meanwhile, mix softened cream cheese with ½ cup of Cesar dressing and 1/3 cup grated Parmesan cheese. Spread over cooled crust. Sprinkle half of the chicken over the cream cheese mixture. Top with lettuce. Add diced peppers and remaining chicken. Sprinkle with grated parmesan cheese and drizzle with additional dressing. Slice and serve.
*Alter salad toppings to fit your preferences. I love adding cucumbers, sliced banana peppers, and tomatoes.
